My favorite way to kick off summer is with the grill! Not only is breaking out the grill the first sign of summer for me, but it is also the perfect way to celebrate during the summer.
I just love having big back yard barbeques, family get togethers, neighborhood parties, and the like. It is so nice to be able gather in the back yard, throw something on the grill, play some fun lawn games, and just enjoy those breezy summer nights.
Especially since it means very little work for me.
When it comes to summer entertaining I say the simpler the better. Marinate some meat, have a fresh veggie side, and a big old green salad, what more do you need? Well…let me tell you! You NEED grilled pineapple. But not just any grilled pineapple, marinated grilled pineapple.
It is so easy to make, it tastes amazing and it is an awesome way to kick off summer with fresh flavors. Plus it is a big crowd pleaser which makes it the perfect food for parties.
And I made a video showing you just how easy it really is!
This recipe comes from a friend. When my husband and I first got married we used to play games every Sunday night with another couple. We would cook, make treats, and play this card game called Hand and Foot! It was always so much fun. Well one week they made this grilled pineapple for us. It was so yummy, and that summer they set up a booth at our local fair selling it. It did really well.
Trust me, it is a great way to cook pineapple.
The marinade is made from coconut milk and brown sugar. You let it sit in the liquid for a few hours, then grill until the natural sugars and brown sugar crystallize! Then you are done. Simple, and perfect for entertaining!

Grilled Pineapple
Ingredients
- 1 can Coconut Milk full fat
- 2-3 Tbs brown sugar
- 1 whole pineapple cut into spears
Instructions
- Stir coconut milk and brown sugar together
- Put skewers into pineapple spears (optional)
- Put pineapple spears into the coconut milk mixture
- Let marinade for at least 30 minutes
- Grill on heated grill until sugars start to brown and crystalize
