Tips and Tricks
Making this recipe is Eazy Peazy, but here are some tips to make it fool proof every time…
- Thaw Properly: You want a fully thawed turkey roast, so place unopened roast on a tray in refrigerator for 1½ to 2 days, or until thawed. To thaw faster, place unopened roast in cold tap water for 3 to 5 hours. Change water every 30 minutes to keep turkey cold. When thawed, keep in refrigerator until ready to cook. Cook within four days of thawing.
- Keep The Netting: The turkey roast comes with a string netting surrounding it. Leave inner string netting on as this holds the roast together during roasting. However, it can be difficult to remove after cooking if you do not plan ahead. So before seasoning your turkey roast, lift the string netting and shift the position on the roast to make removal easier after cooking.
- Fresh Herbs: Use fresh herbs for the herb butter rub, as it really does make a difference. But if you are in a pinch, dried is fine, just cut the amount down to about half.
- Safe Leftovers: Refrigerate leftovers within 1 hour of eating. Use leftover turkey within 3 days.
Make Ahead and Storage
How to make this recipe ahead of time:
This recipe is pretty easy, and doesn’t take long, so if you want to prep ahead, you can mix the herb butter compound together up to 48 hours ahead. And the dry brine can be mixed up ahead as well.
However, one of the best ways to make this ahead is to simply use the slow cooker instead of the oven. Here’s how:
- Thaw the turkey roast completely. And prepare as stated for oven roasting.
- Spray bottom of the slow cooker with cooking spray
- Place dry brined and herb butter slathered roast in the slow cooker.
- Add ½ cup liquid, I suggest apple juice if you’d like a sweeter roast, or water.
- Cover and cook on LOW up to 8 hours or on HIGH up to 4 hours, until a minimum internal temperature of 165ºF.
- When internal temp is reached, remove from the slow cooker and let stand 10 minutes for easier carving.
