Hi guys! I have something fun to share with you today! This year on my blog I am going to be sharing some of my favorite products, and act as a brand ambassador, to spread the word about products I really love and use. So without further ado…let me introduce you to Vital Proteins!
I have talked several times on my blog and in my videos about how much I use protein in my picky-eater’s diet. He is not a fan of the typical sources for protein, so finding quality protein to add to his diet has been my mission of late. We have tried SO MANY kinds, with some successes and some failures in our search for the best option for us. And I am happy to report that my search is over!

Now let’s talk about this breakfast! I am a firm believer in keeping things simple in the morning. With 4 small children, and the fact that we commute our kids to school, I love having quick and tasty breakfast options. Overnight oats are one of my favorite. However, this is not a typically high protein breakfast, but we get around that by making it with coconut milk, and adding in Vital Protein Collagen Peptides!
Vital Proteins are collagen proteins, which means they are made from bovine hide. They offer a ton of great benefits like stronger hair, nails, and skin, better digestion, weight management, and more. You can read all about the research done on them here.
I love all the benefits, but one of the main reasons I personally love this brand of protein is it is virtually odorless and flavorless.
My picky eater could always tell when I added a scoop of protein to things in the past, but now, I can even add it to a glass of water, and he doesn’t know the difference.
Vital Proteins offers two options: Collagen Peptides and Beef Gelatin.
The collagen peptides are what I used in this recipe. They are cold water soluble, and work in smoothies, drinks, etc. They are a great way to increase protein in your favorite foods and drinks. They also offer the Beef Gelatin, which is great for making things like gummies, custards, and stews and soups. The beef gelatin is hot water soluble and needs to be bloomed in cold water first. It is great for thickening things. But I will share more about that in a later post and recipe. Today let’s talk about this oatmeal.
I start with old fashioned rolled oats, add some coconut milk, and some honey, and coconut flakes. Then the protein! That is it. Of course there are so many ways to change things up with this, like adding coconut cream, or vanilla yogurt in addition to the coconut milk. My kids like it a little creamier so I often stir in a vanilla greek yogurt in place of half the liquid. But for me, I like it with just straight coconut milk!
I recommend giving it a go both ways and determining which way you like best. I will include a few variations to this recipe in the recipe card notes section. But the real key is just getting enough liquid that by the next morning your oats have the right texture. I like a 2-1 or greater ratio when making overnight oats. so 3/4 cup oats means at least 1 1/2 cups of liquid. This will soften the oats, but leave a little bit of chew. My kids like more liquid. So consider your preference when making this recipe.
Then there is the sweetener. This can be left out if you wish, but to achieve the coconut cream pie flavor, I like to add it in. I use honey, but feel free to use brown sugar, agave, or whatever sweetener you like best. I find just a drizzle (1 tsps per serving) is all I need. Adjust according to preference.
Then pop them in the fridge overnight, and the next morning garnish with coconut flakes! The protein doesn’t change the flavor at all, and so you will have a totally delicious, high protein breakfast option that is made and ready to go. If your mornings are anywhere near as busy as mine, I am sure you will appreciate that!

High Protein Coconut Cream Pie Overnight Oats
Ingredients
- 3/4 cup old fashioned rolled oats
- 1 1/2 -2 cups coconut milk*
- 2 tsp raw honey or sweetener of choice
- 1 tbs sweetened coconut flakes
- 2 scoops Vital Proteins Collagen Peptides
Instructions
- In a bowl mix together the oats, and half the coconut milk.
- Stir in sweetener and coconut flakes.
- Add the other half of your liquid and the collagen peptides, and stir well. If you are using a vanilla greek yogurt, or other liquid, this is the time to add it. Adjust liquid according to preference and consistency desired.
- Refrigerate overnight, garnish with additional coconut flakes, and honey drizzle if desired.

Overnight breakfast helps me out in the morning. Being a night person, it is nice to be able to prepare breakfast before bed and in the morning its all done. I like the flavor here and the extra protein in the morning would really help me start off my mornings right.
