Crunchy kale, salty bacon, creamy hard boiled egg, nutty quinoa, and delicious edamame make for a really tasty, and also healthy salad!
As a major holiday enthusiast you would think I am a huge fan of Valentine’s Day. However, my history with Valentine’s Day is less than awesome, and when it comes to holidays, it rates pretty low in my book.
Growing up my mom always did an amazing job of making us kids feel special and loved on Valentine’s Day with heart shaped pancakes, and special Valentine gifts, small and meaningful, or sugar-full, either way we loved it.
But later in life, Valentine’s Day felt a little contrived to me. So much pressure, and well, my first married Valentine’s Day was a mess. You can read about it in this post if you really want. Let’s just say, fun surprise/sexy scavenger hunt gone awry!
Despite my less than enthusiastic feelings about Valentine’s Day, I am all about good food, and that is one thing Valentine’s Day is amazing for. Decadent meals, romance, and fun. And so, for this lovely holiday, I teamed up with some blogging friends to bring you a full meal plan, with drinks, and desserts. And I offer the salad!
I mean, look how amazing this is? This salad is full of tasty goodness, crunchy yumminess, salty bacon, and creamy egg. Basically it will never let you down, unlike the holiday I will be enjoying it on.
Did I mention it has quinoa in it? So yeah, not only does it taste awesome, but it is kind of healthy too! But doesn’t actually taste healthy, which I love.
Kale Chopped Salad
Ingredients
- 3 cups Kale chopped
- Half of a small-ish red onion chopped
- 1 cup edamame
- 1 cup cooked quinoa
- 3/4 cup cooked turkey bacon chopped
- 4 hard boiled eggs peeled and chopped
Dressing
- 1 Tbs lemon juice fresh squeezed
- 1 Tbs olive oil
- 1 Tbs coconut sugar
Instructions
- Toss all the salad ingredients in a bowl
- In a small container, mix together the dressing, give it a good shake
- Pour dressing over the top of the salad
- Toss well
- Serve and enjoy!

Ohhh, I love the idea of adding quinoa to a salad rather than making it a salad all it’s own. This sounds so light and refreshing and I love how simple it is, especially that dressing!
