When it comes to easy lettuce wraps, these are it! They take only 15 minutes or so to make, and offer everything you want in a brunch, appetizer, or light lunch. They are insanely tasty, super easy to make, and bring great flavor to the table.

Lemon Chicken Lettuce Wraps are a crunchy, satisfying lunch or brunch item made with Pure Leaf tea.

How to Make Lettuce Wrap Sauce

These lettuce wraps don’t have a sauce, but instead the chicken is cooked in a delicious sauce, and ends up so flavorful additional sauce is not needed. Of course, you can add some chili sauce, or soy sauce if you want them saucier. Personally, I like that they aren’t too messy to eat. They are great finger food for summer parties.

The key to these lettuce wraps is the sauce the chicken is cooked in. It is made using all your favorite lettuce wrap players, such as red wine vinegar, soy sauce, and minced garlic, but has one special ingredient:  Pure Leaf® Tea House Collection Sicilian Lemon & Honeysuckle tea. Lemon Chicken Lettuce Wrap Variations:

While I love the combination of crisp, crunchy, tender, etc. and think these lettuce wraps are amazing as they are, especially with that lemon ginger soy sauce, there are some fun things you can do to amp them up, or add some variety. Here are a few of my favorites:

  • Add cucumber: The matchstick carrots already give these crunch, but add some cucumber for additional crunch, plus lots of great benefits.
  • Add peanuts: A few crushed peanuts on top can add some crunch and some depth of flavor. Delicious.
  • Try green onion: I love the cilantro on top, but a little green onion or scallions can also add some nice flavor.
  • Lighten up on the red chili pepper flakes: These lemon chicken lettuce wraps have a little tiny bit of kick to them because of the chili pepper flakes. If you do not want heat, or want to allow people to customize their heat to their preference, reduce the amount, and instead serve these with a garlic chili sauce or hot sauce.

Chicken Lettuce Wrap Tips:

  1. When serving these chicken lettuce wraps at a summer party it is important to realize that the Bibb lettuce may wilt if out in the sun too long. So wash and prepare the leaves just before serving, or pop them into an ice bath to crisp them back up just before serving.
  2. Cut the chicken into small chunks. You want each mouthful to get a variety of the texture and flavor of these lettuce wraps, and that is hard to do if the chicken is cut too big. So chop small. Or you could even use ground chicken if desired.
  3. Serve paired with Pure Leaf® Tea House Collection Sicilian Lemon & Honeysuckle iced tea, as it is light, refreshing, and offers a subtle, but beautiful blend of Sicilian lemon and honeysuckle with an organic black tea.
  4. When serving at a summer brunch of party, let people assemble their own, while they can be prepped ahead, save yourself time and hassle, and let people customize to their personal preferences.

Ingredients

  • 1 teaspoon oil
  • 1 1/2 lbs chicken breast chopped small
  • Salt and pepper
  • 6 bibb/butter lettuce leaves
  • 1/4 cup chopped cilantro
  • 1/2 cup shredded carrots
  • 1 Tbs toasted sesame seeds

Sauce

  • ½ cup Tea House Collection Sicilian Lemon
  • 1 tablespoon brown sugar
  • 1 tsp minced garlic
  • 1/2 teaspoon red pepper flakes
  • 1 Tbs red wine vinegar
  • 1 Tbs soy sauce
  • 1/2 tsp minced ginger
  • 1 teaspoon cornstarch

Instructions

  • Heat oil in a skillet over medium heat.
  • Dice chicken, and place in hot skillet, season with salt and pepper, and cook until chicken is no longer pink, about 8-10 minutes.
  • In a bowl, whisk together Tea House Collection Sicilian Lemon, brown sugar, garlic, red pepper flakes, vinegar, soy sauce, ginger, and cornstarch.
  • Pour over chicken and cook until sauce is thickened, and chicken is cooked through.
  • Remove from heat.
  • To serve: divide chicken among lettuce leaves, top each with carrots, sesame seeds and cilantro.
