Mango Avocado Salsa

Fresh salsa is a fantastic snack. It is low calorie. It has awesome flavor. It comes together fast. It is full of fresh ingredients and let’s face it, who doesn’t love salsa? Well at least at our house salsa is a daily must-have.

Mango avocado salsa is amazing! A-may-zing! I had some great mangos, and some ripe avocados, and this great salsa came of it, and thank heavens it did.

This is really great if you let it refrigerate for at least 30 minutes before eating, as it lets the flavors mesh. But really, it is good no matter when you eat it. I can rarely wait the full 30 minutes.

Making Your Own Chips

So I pulled out some corn tortillas (another thing I pretty much always have), and decided to bake them up to make them into chips. I cut them into triangles, sprayed them with coconut oil and a little salt. I baked them at 350 degrees for about 15 minutes. And they were perfect! Perfect. And the ideal compliment to this amazing salsa.

Enjoy it. It is great on salads, chicken, fish, or by itself.

Mango Avocado Salsa

A sweet mango salsa, this salsa has some heat, and the creamy bites of avocado, making it the perfect dip.

I was going to make a mango salsa last week, but ended up just eating the mango. Now I have avocados that need to be used...and no mango, lol.
