Molten Lava Protein Mug Cake

A chocolate-y, dense cake, filled with ooey, gooey runny, chocolate, cooked in a mug in the microwave, in less than 5 minutes! These Molten Lava Protein Mug Cakes are the perfect dessert for two. The added protein makes it fun and better for you!

Ok, so this is not photographed in a mug, but watch this video, you will see that I cooked it right in a mug in the microwave. How awesome is that? I just dumped it out onto a plate so I could top it and trick my love into thinking I slaved over a hot oven to make a yummy dessert.Yep…that is how I roll!

Anyway, so easy right?

Mug cakes are the greatest because they are single serve (or two serving as is the case for this one) desserts that are awesome for when you have a sweet tooth. This particular cake is even better because it has added protein. Collagen protein, which is great for nails, hair, skin, and joints! As well as several other benefits. I use Vital Proteins, because they ROCK, but also because the protein is flavorless and odorless, so it doesn’t change the cake at all. And this cake! Awesome. Totally not your normal rubbery mug cake.

And check out that molten? Yum! Basically it is melted chocolate, so pick your favorite chocolate. I have tried it with several different varieties, and let’s face it, they are all pretty good. I believe in good chocolate. But this is one of those amazing, late night, I need a treat cakes. But the beauty is, it is also great for holidays, like Valentine’s Day! It is super easy to make,

Did I mention the protein? That means it is good for you! So feel free not to share. Hahhaha I figure if you can have your cake, and eat it too, then that is a big win all around.

Lots of mug cakes were consumed in the making of this post. I started with a recipe from Cleobuttera, which is awesome, I have used it before, and trust me, it is the best!!!  I added the protein, adjusted things a bit here and there to try and get the right consistency. Then basically went back to the beginning, and stirred in the perfect protein! I went with the cold water soluble version, collagen peptides! You can learn about the difference in this video.

Anyway, enough of my rambling, make this for Valentine’s Day! Or any day. Or every day. It is yummy, and just right when I want a bit of cake!

Let’s get to the recipe:

Molten Lava Protein Mug Cake

A molten lava cake you can make in the microwave, that is packed with protein and can be made in 5 mins. Recipe very slightly adapted from Cleobuttera

Ingredients

  • 1 scoop Vital Proteins Collage Peptides
  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 2 Tbs cocoa powder
  • 1 pinch of salt
  • 1 egg room temp
  • 3 Tbs melted butter
  • 1/2 tsp vanilla extract
  • 3 Tbs Whole Milk
  • 1 ounce chocolate
  • 1 Tbs water

Instructions

  • Find a large mug.
  • Mix dry ingredients together in it. (Flour, sugar, salt, protein, salt)
  • Add egg, melted butter, vanilla, and milk, and mix together, scrape the edges to make sure it is well incorporated.
  • Put chocolate on top, don't push it in, it will sink
  • Add a TBS of water
  • Microwave for 1 min 20 second- 2 minutes, until top is springy to the touch, but still slightly wet.
  • Serve immediately.

Notes

Every microwave is different, start by cooking it for 1 min 20 seconds, test the top (shouldn't have much water) and add more time in 10-15 second increments until done.
If you don't want to eat it in the mug, spray the mug with no-stick spray, and mix everything in a bowl instead of in the mug. Then after cooking, tip over onto a plate.
Garnish with whipped cream and berries!
