When I was a kid we used to go to my Grandma’s house. She had a big storage room full of delicious treats. And one whole shelf of her storage room was dedicated to jello. She had gelatin molds, and would make jello salads, and layered jellos, and I LOVED it! It was so fun. There is just something about cutting into a gelatin holiday wreath and slurping it down that was so much more fun then regular jello! And can we just talk about jigglers for a minute? Hahaha they are pretty fun stuff.

Anyway, I have not eaten a lot of gelatin in the past ten years. I don’t make it often enough. Rather than use a packaged jello, I decided to try making this patriotic version on my own, with ingredients I know and trust. I used fresh fruit juices. I had grape juice I had made myself from grapes off my grandparent’s vine. But you could make this with any kind of store purchased  juice if you would like. Mine was more purple then blue. So feel free to use a blue juice.

For the gelatin part I used Vital Proteins Beef Gelatin. I use their collagen products and peptides all the time, and love adding them to my dishes to get a little extra quality protein. Even my desserts, like these protein peanut butter cups. I love the protein! It is great for hair, skin, nails, and internal health. And it does the job of making my berries and juice into a jiggly, wiggly dessert!

I am not going to claim that these are the healthiest layered jello desserts out there, but I will say that while they are a dessert, they do have some health components, and they are so much easier to make then you think. Don’t be intimidated. Using Vital Proteins Beef Gelatin is super easy. Basically you just let it bloom in some cool liquid, then add it to heated liquid, then chill in the fridge, and you have jello!

Ingredients

  • 3 cups grape juice divided
  • 3 cups red fruit juice divided
  • 4 scoops Vital Proteins Beef Gelatin
  • Whipped Cream
  • Strawberries and Blueberries for garnish

Instructions

  • In a bowl combine 1 1/2 cups of grape juice with 2 scoops Vital Proteins Beef gelatin, and stir until full incorporated.
  • In a medium saucepan heat the remaining 1 1/2 cups grape juice, and add gelatin mixture to it. Stir well, bring to a simmer, and then pour into 4 cups, dividing evenly.
  • Put cups in the fridge for 2 hours to let set up and chill.
  • Repeat the same process with the red fruit juice to create the second layer.
  • Let chill and set up completely.
  • Top cup with whipped cream, and garnish with berries!
  • Enjoy!
