Let’s talk about life today, life and good food. Because you know good tasting food is life. But so is being busy.

Busy– that is a word I feel so intimately familiar with. If someone asked me to describe myself in three words, “busy” would definitely be one of them. I sometimes feel like I am running myself ragged just trying to keep up with all the demands on my time. And I know I am not alone, the fact is, most moms are busy, right?

With kid’s schedules, running a home, a career, and trying to have it all, and do it all, we have full lives, and sometimes this comes at a cost. For me, lately, that has been the cost of sitting down to a family dinner. Even as a food blogger, getting a good meal on the table during the hectic hours of evening can be a huge challenge. People think my family always eats so good, and while I am dedicated to helping other families get dinner on the table in less time, the scary
truth is we have way too many dinners a la drive thru.  Lately I have been feeling the real need for some good, tasty, easy to make food options that my kids will love, and that I love too. Things that are ready when we are, and don’t take much thought or hassle, but are delicious and good for us.

A fantastic meatless Monday sandwich option

We all know a decent meal that makes everyone happy can be a challenge, and trying to make sure it is nutritious and easy can sometimes feel super overwhelming. Which is why I am really excited to share the MorningStar Farms Chik’n plant-based portfolio with you: They recently introduced BBQ Chik’N Nuggets along with renovations to fan favorites original recipe Chik’N nuggets and Original Chik Patties.

I have found that even as a hard-core meat eater, who lives and dies by my grill, these tasty plant-based Chik’N products are now a regular at our house because they are easy and taste great.

My kids love the nuggets, and a simple sandwich made with the patties is the perfect dinner for the husband and me, especially on busy nights of running kids to their various activities.

I am a mom of four, so trust me, I know how important it is for the food you serve your kids to taste good if it is going to have any chance of actually being eaten. A great vegan, or plant- based food is well and good, but if it doesn’t taste good, it won’t matter how easy it is, or how nutritious, there is no chance my kids will eat it.

I know how to pick my battles, and trying to force my kids to eat foods that don’t taste good for the sake of avoiding meat is not one I am willing to fight. Luckily, with MorningStar Farms I do not have to. The products are so yummy, no one cares if they are plant based or not. Which means, I can embrace the fact that we are flexitarians: Sometimes eating plant-based, and sometimes not. Plus I can give my family variety and balance, and add more plant-proteins to our diet in an easy and tasty way. This is a game changer for my family, and I hope it will be for yours too.

Ingredients

  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon dijon mustard
  • ½ teaspoon worcestershire sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ teaspoon onion powder

Instructions

  • Combine all ingredients in a small dish and stir to combine.
  • Taste, and adjust to preference

    We all love Morning Star foods – I’ve been eating them since I was little. My favorite is the chicken patties – they are SO good!! The chicken nuggets are also really good! We love the breakfast sausage patties and links – if you haven’t tried them – make sure you do!

    Morningstar is supposed to be a health food but uses genetically modified ingredients! Check the package and protest until they do the right thing and remove GMO!
