If you want a cake that is unassuming but really packs a punch, this is it! It looks like nothing special, but it is moist, rich, and delicious. It has a subtle sweetness, and a thick, creamy ricotta bottom layer that makes this one of our extended family favorites. My mom got this recipe from an Italian friend. And let me tell you, we make it too much! I serve it with fresh whipped cream, or vanilla greek yogurt, and fresh cut strawberries, but it is good on its own too. Ricotta Cake, Italian Cheesecake
Ingredients
- 1 box golden vanilla cake mix or French vanilla or yellow
- 3/4 cup sugar
- 1 tsp vanilla
- 30 ounces ricotta cheese
- 4 eggs
Instructions
- Mix cake mix according to directions and put in greased 9 x 13 pan.
- Beat the sugar, vanilla, eggs and ricotta
- Spoon over the cake mix.
- Bake at 350 for 1 hr 15 mins

Mix a yellow cake mix according to directions on box.
Pour into a greased cake pan.
Mix together the eggs, sugar, vanilla, and ricotta.
