A quick cook, and oh so tasty skillet pasta that is bursting with hearty flavor and takes very little work!
I have gotten into a bit of a rut lately, a bad rut. I skip lunch. And breakfast. I basically skip everything until after my kids get home, and then I am running as fast as I can to get my kids to piano, and practices for this and that and the other, and so I eat junk food. Then I complain to my husband that I am getting fat. I feel like crap. I am lethargic. You get the picture. It is not a pretty one.
It is not a good cycle. I usually have too much to do and put my own needs last.
So I decided it is time for me to start planning ahead a little so I can actually take care of myself and then I won’t be as cranky or mean to my family, and maybe be able to maintain a healthy weight and lifestyle. You know…little things like that!
So here it is, my big announcement: I am going to start sharing some meal prep and planning on the blog. I have given it a lot of thought (A day’s worth…sorry) and I realize that I am not going to do much meal prep for our family dinner meals, but I can for my lunches. This will help me to actually eat and eat something good for me, and who knows, maybe it will help some of you.
Once I get the lunch thing under control, I will see what I can do about branching out into family meal prep for things like dinners. But baby steps for now. Ok? Who knows, maybe it will be so much fun I won’t be able to help myself and I will get dinners and snacks in there too. But I am trying to set realistic expectations.
Here is what you can expect: A plan for meal prep that takes 1-2 hours. A shopping list. Relatively healthy meals. Recipes and instructions. I will try to post this once a week, and am crossing my fingers I can start next week.
Anyway, you might be wondering why I am talking about meal prep when I am sharing this pasta dish, and the reason is that it would be perfect. I made it for myself for lunch. It was quick, easy and very tasty. I think it would be a great meal prep meal.

Sausage Mushroom Pesto Pasta
Ingredients
- 2 cups cooked rotini pasta cook according to package directions
- 1 tbs olive oil
- 1 cup white mushrooms sliced
- 1 cup smoked sausage or Keilbasa
- 1 cup frozen petite peas
- 1/2 cup pesto premade or make your own
- 1/3 cup paremsan cheese
- Salt and pepper
Instructions
- Cook pasta according to directions and set aside
- In a skillet heat olive oil, and sautee mushrooms for 2-3 minutes, add in sliced up sausage and pesto.
- Give it a good stir, and cook to heat up sausage and cook mushrooms
- Add in noodles, and frozen peas, and stir.
- When peas are hot and mushrooms are cooked through, serve, and garnish with parmesan
- Season with salt and pepper to taste if desired.

I meal prep for the week every week (well most weeks) on Sunday. I don’t know why it’s not on my blog yet…I have a post started, and I haven’t finished it. It is a huge time saver for me. Your pasta looks delicious! Sharing!

This looks really delicious. I “try” to make sure I keep a little extra or make a little extra at dinner (like if I’m grilling chicken breasts for dinner, I throw an extra one on) so I can have them for lunches. Its kind of a no-brainer…but I don’t always do it. Menu planning is definitely and area I lack in severely. haha

Yum! Pesto is a favorite of ours, we practically eat it every week, I next time instead of chicken I’ll definitely try adding sausage, mushrooms and peas!!!
