A flavorful thai peanut chicken penne pasta dish, made in a single skillet, in just 15 minutes, and ideal for busy weeknights.

I am obsessed with one pot pasta dishes. But I always feel like if you really make it in one pot, the pasta is never quite cooked right. I mean, sometimes you get lucky, but it is hard to get consistent result without boiling and draining.

But things have changed. Have you guys seen Barilla Pronto? I saw it while shopping at Walmart. Barilla is an authentic Italian brand. It is pasta that can be made in “one pot” or in this case, skillet, without boiling/draining and cooks in 10 minutes. When you add in Tyson Grilled & Ready Chicken Strips (frozen) to the Barilla Pronto Pasta, you get a quick, easy, dinner in 15 minutes.

That means this awesome Thai Peanut Chicken Penne…15 minutes start to finish. How great is that for a weeknight meal? And the flavor on this sauce! Lick the bowl clean.

Honestly I feel for those with peanut allergies because this is a serious favorite of mine. And Barilla and Tyson, combined make the perfect easy family meal. While the pasta is cooking, you can whip up a fantastic sauce, add the chicken, and pour the sauce over the top. Let it cook for a few minutes, and then you are done.

You don’t even have to worry about whether or not your chicken gets cooked through. Tyson Grilled and Ready Chicken Breast Strips are already fully-cooked, 98% fat free and have no preservatives. Which means they are great for my family, but easy enough and convenient enough for any family.

Did I mention both the Barilla Pronto and Tyson Grilled and Ready Chicken Breast Strips can be prepared in the microwave, making it an even easier and faster meal option. You know you want a bite!

But let’s talk about this sauce for a second. It is inspired by a sauce I tried from Dream Dinners, and it has so much awesome flavor I don’t even know where to begin. There are a few ingredients involved, like peanut butter, coconut milk, soy sauce, some sugar, some vinegar, a little red curry paste, fresh garden peppers (red), and some basil and cilantro! It sounds complicated, but truthfully, just toss what you need in a bowl and stir!

Skillet Thai Peanut Chicken Penne

A 15 minute Thai Peanut Skillet Chicken Penne Pasta that is full of flavor and super easy to make.

Ingredients

  • 1 box Barilla Pronto Penne
  • 2.5 cups Tyson Grilled and Ready Chicken Breast Strips

Thai Peanut Sauce

  • 1/4 cup peanut butter
  • 2 cups Coconut Milk full fat
  • 2 1/2 Tbs lite soy sauce
  • 1 3/4 tsp red curry paste
  • 1/4 cup brown sugar
  • 1 tsp sriracha or other hot sauce adjust for heat preference
  • 1 1/2 tsp rice vinegar
  • 1/2 tsp sesame oil optional
  • 1/2 tsp sweet basil leaf dried
  • 1/2 red pepper approximately 1/4 cup, diced finely
  • 1/8 bunch of cilantro chopped finely
  • 1/4 cup crushed peanuts

Garnish

  • 1/4 cup crushed peanuts

Instructions

  • Start cooking Barilla Pronto Penne according to package directions
  • While cooking, mix sauce ingredients together in a bowl
  • When pasta is cooked (10 minutes), put in Tyson Grilled and Ready Chicken Breast Strips
  • Pour sauce over the top
  • Let simmer until chicken is heated through (5 minutes)
  • Sprinkle crushed peanuts over the top
  • Enjoy!

    I actually found this recipe searching for something similar to the dish that I too tried at Dream Dinners. It was fabulous and I wished I paid more attention to the ingredients when I assembled it! That being said, I knew this would be a hit since it was inspired by the same dish. The flavor was wonderful and I highly recommend it! Very easy. I have yet to try the brand of pasta mentioned but will try that in the future. This one is a keeper! Thank you!
