Hey friends, I’m Sarah! I’ll be guest posting a new recipe here on Eazy Peazy Mealz each month. I run a vegetarian health food blog over at Live Eat Learn where we explore a new ingredient every two weeks. And try as I might, so many of my recipes revolve around breakfast. People like to break down their dishes by category, you know, appetizers, entrees, snacks, desserts…nope. For me it’s “breakfast” and “not breakfast”. You can call me a diehard.
So when I discovered the beauty that is a breakfast bake a few months ago, I was hooked. Imagine this: you put in 15-ish minutes of work throwing all the ingredients into a baking pan (or putting the kiddos to work layering everything in), then pop it in the oven and go about your morning. Soon your house begins to smell like warm oats and cinnamon, perhaps even the neighbors come knocking in search of that delightful smell. You open the oven and that simple mixture of grains, fruit, and milk has transformed into a complete breakfast, ready to be served to the whole family. That, my friend, is a breakfast bake.
And how awesome would this breakfast bake be for Father’s Day? Dad gets something special, but you aren’t totally worn out after making it!
All good fruity breakfast bakes have a few key components:
Fruit: You can use any kind of fruit you have around! We’re using summer fruits today. Fresh strawberries and peaches with a banana base! Berries also work marvelously and make for a gorgeous dish.
Grains: The grains are a combo of oats and quinoa, though you can substitute the quinoa for more oats or for bulgur if you have it. You could even go a little wild with the grains and throw in a few spoonfuls of chia seeds for an added protein kick!
Liquid: We’ll pull it all together with a blend of milk, eggs, and vanilla. It may seem like a lot when you pour it in, but your grains are going to soak it all up as they bake.

Summer Fruit Breakfast Bake
Ingredients
- 3 bananas sliced
- ½ cup quinoa
- ½ cup oats
- ¼ cup brown sugar
- 1 tsp cinnamon
- ¼ tsp salt
- 1 cup sliced peaches
- 1 cup sliced strawberries
- 2 cups milk
- 2 eggs
- 1 tsp vanilla extract
- ½ cup coconut flakes or shreds
Instructions
- Grease a 9x13 inch baking pan and place banana slices in the bottom of the pan.
- In a separate bowl, combine quinoa, oats, brown sugar, cinnamon, and salt. Pour mixture over the bananas.
- Arrange sliced peaches and strawberries over the oat mixture.
- In a separate bowl, whisk together milk, eggs, and vanilla extract. Slowly pour mixture over the fruit.
- Sprinkle with coconut flakes.
- Bake at 375 degrees F for 1 hour, or until top is light brown and firm.
- Serve warm or cold, topped with yogurt, fresh fruit, or powdered sugar.

Is the egg just for binding? Also, can this be prepped ahead and stored in refrigerator overnight then baked in the morning?

Yes you can prep ahead, but keep in mind you want it to come up to room temp before baking. Binding and texture.
