Don’t you just love an excuse for a good appetizer?
I sure do. I am not a big football lover. I enjoy a good college game with my husband because it is 4 hours with a sitter, a nice break from reality, and usually involves some pretty tasty concessions (I lead a food-centric life)! But chances are I will never be in the actual stadium for a Super Bowl, and watching THAT much football on television, at home, when I have a zillion other things to do…a bit tedious.
BUT…
I do love the food. I love throwing a party, and making a big deal out of appetizers. I enjoy appetizers like Shrimp and Avocado Bruschetta, but anything with puff pastry, like these Jam and Brie Bites, or phyllo dough speaks to my white flour loving heart.
When you add in a spicy sausage, avocado, cilantro, and tomato…ummm salivating!
Trust me when I say that if you like a “Mexican” or “South West” twist on food, you will enjoy these. The phyllo dough cup makes a nice little crunch. The spicy sausage gives it zing. The avocado makes it creamy. The rest makes it fresh and tasty. I basically had these for dinner!

Super Bowl Mexi Cups
Ingredients
- Phyllo dough cups
- 1/2 pound spicy sausage
- 1/4 cup sweet corn kernels optional
- 1/3 cup diced onions
- 1/4 cup grape tomatoes sliced
- 1/2 an avocado diced
- 1/4 cup salsa
- Fresh cilantro to taste
Instructions
- Brown your sausage with your onion, and when almost done, add in corn kernels so that they are warmed, but not cooked too long.
- Your phyllo dough cups should be pre-baked and ready to fill
- Put about a tsp of salsa in the bottom of each cup
- Then put a scoop of sausage mixture in the phyllo cup
- Top with diced avocado and tomato
- Garnish with cilantro
- Serve warm
