Sweet Chili Lime Chicken Thighs

Fast, easy, and flavorful baked chicken thighs. The perfect go-to dinner for a quick week-night meal.

If you haven’t noticed, I really love the combination of sweet chili sauce and lime, such as the Sweet Chili Salmon, Thai Noodle Bowl, or the Chili Honey Lime Chicken Tenders.  This particular recipe uses the same awesome flavor combination, and requires minimal work. Eazy Peazy just as it should be. Mix a few ingredients together, pour it over the chicken thighs, and bake. Done!

And like the Creamy Spicy Garlic Chicken, I love it because chicken thighs are really inexpensive where I live, and readily available. Not to mention my kids love them. Big bonus for me as I am not big on cooking more than one dinner.

Sweet Chili Lime Chicken Thighs

Ingredients

  • 6 skin on chicken thighs
  • 3/4 cup light soy sauce
  • 2 Tbs sweet chili sauce I used Mae Ploy
  • 2 Tbs Honey
  • 2 Tbs Lime
  • 1 Tbs Garlic minced

Instructions

  • Mix together the soy sauce, sweet chili sauce, honey, lime, and garlic
  • Preheat the oven to 375
  • Place the thighs in a baking pan, bone down
  • Pour the sauce over the top of the chicken and bake for 35-45 minutes
  • Serve with rice and fresh vegetables

Another huge plus about this meal was that there was just one or two dirty dishes. I have made this several times, and the last few times I opted to mix the sauce directly in the baking dish I was planning to use. Then pulled out the thighs, and sort of swirled them around in the sauce to get them coated.

I served these with some cilantro lime rice and fresh green beans. It was a colorful and delightful dinner. I think it is important to note that the sweet chili sauce is not very spicy, so it is a totally appropriate dish to serve kids or those who don’t like too much spice. It just adds a nice flavor.

Sweet chili lime chicken thighsIf you are not a fan of the dark meat, try making the sauce and cooking it with chicken breast instead. It will still taste awesome.

    This looks delicious and I love the pairing with cilantro lime rice! I've always cooked with the chicken breast and it wasn't until reading your post that a light bulb went off...I always order dark meat fried chicken or take the cut of dark meat turkey at Thanksgiving, so why am I cooking with white meat??? Wow! I can't wait to cook with chicken thighs! Thanks!!!
