I’m from the south, and while we are known for our grits, they have definitely not been on my menus until recently. It was one of those foods that I just assumed I wouldn’t like based on how it looks. I know, how grown up of me, right? When the time finally came and I spooned that first taste of grits into my mouth I immediately calculated how many missed opportunities I had had to eat grits. It was too many. Since then I’ve been trying to remedy my grave mistake by eating grits in as many ways as I can possibly imagine. Que the taco bowl.
Breakfast food with Mexican flavors is just a match made in heaven. I mean just think breakfast nachos, breakfast burrito, breakfast taco. This recipe calls for about a quarter of a cup of refried beans. Now… I won’t pass judgement if you use the canned kind, but, if you want to try something new I highly recommend my recipe for black refried beans, which is also delicious just eaten with chips as a dip! My beans are packed with extra flavor that will really set your breakfast above the rest.

Lately, I find my breakfast burns away faster than I can blink and by 10:00am I’m already reaching for a snack. This breakfast definitely has some weight to it. It will fuel you till lunch and keep you not only happy but full and focused, sorry potato chips not this time.

The other great thing about this recipe is you can make your eggs anyway you like. Love that really runny yolk, go sunny side up. If liquid yolks aren’t your thing, go scrambled. If you’re an in between person like me, over medium is the ticket. An over medium egg has a slightly soft yolk and a fully cooked white. I think the creamy yolk mixing in with the grits and beans gives just that extra punch of flavor.

Taco Breakfast Bowl
Ingredients
- 1/4 cup quick cooking grits
- 1 tbsp butter
- 1/4 tsp ground black pepper
- 1/4 tsp ground cumin
- 1/4 cup refried beans
- 1 egg
- chopped tomatoes
- sliced avocado
- lime wedges
- minced cilantro
Instructions
- Prepare grits according to package directions. After cooking add black pepper, cumin, and butter, stir till combined. Set aside.
- Heat refried beans in the microwave, covered, for thirty second intervals stirring in between till heating through. Set aside.
- In a small frying pan cook egg as desired. (Images show an over medium egg)
- To plate, spoon grits onto plate, top with beans, egg, tomato, avocado, and cilantro. Squeeze lime wedge over top.
