What is your family breakfast routine? Ours usually looks a little like me stumbling into the kitchen bleary eyed to feed my kids something…anything, then lying to myself about how I am going to get 10 more minutes of sleep before I drive my kids to school. Those 10 minutes feel like a millennium because they are highly interrupted with searches for socks, tattles on mean siblings, pleas for someone to sign the homework, or listen to the fluency reading, etc. Then I double check that everyone ate something. We pack a lunch. Then head out the door for school.

I get home, and tell myself I am going to eat something. Then, I start cleaning the kitchen up, because inevitably my little rascals left it a huge mess. I don’t like to cook in a messy kitchen, so by the time I get the kitchen cleaned up, I have finally woken up enough to remember the 15 million things on my to-do list, so I skip breakfast and get to work.

It is only when I take my mid-morning break to re-watch some Gilmore Girl episodes that I remember how hungry I am. Then I eat. And usually not the kind of thing I should eat.

Breakfast is tricky for me, but when I plan ahead, that is when it goes well. And I usually feel better and am more productive when I actually eat something, and something that is good for me.

And then I used it in these waffles! Perfection.

These waffles are so simple to make, and only have 3 ingredients. But they are totally yummy, nutritious, and can even be made ahead of time and popped in the fridge or freezer to make eating on hectic mornings, (AKA every morning) easier to accomplish. They are going to be part of my family’s 7 day breakfast challenge. And let me tell you, there are no complaints coming from the kiddos about these waffles. They LOVE them! And they are sweet, so they don’t even drown them in syrup. We usually just eat them plain with some fresh fruit.

Honestly, having breakfast helps me have a better morning over-all. So does a few other things. Like, for example, signing those pesky homework slips the night before, laying out clothes for my kids, finding their backpacks, and pre-packing lunches so we aren’t rushing around so much in the mornings.

I have also found that drinking a big glass of water helps my body get a great head start on energy, and the bleary eyed routine doesn’t last nearly as long. I would love to eventually add in things like exercising, etc. But for now, I will settle for showering and getting ready at the same time my kids do, and eating together. Nights are hectic, so having a family meal together in the morning is a great way to touch base, connect, and bond as a family.

Ingredients

  • 7 egg whites
  • 1 package Carnation Breakfast Essentials® Vanilla
  • 1/2 cup Old fashioned rolled oats ground into flour in a food processor or blender

Instructions

  • Put egg whites and the package of Carnation Breakfast Essentials® Vanilla in a medium sized bowl, and use a hand mixer to mix for 5 minutes.
  • Put oats in a blender or food processor, and blend until a fine flour
  • Stir oats into the egg white mixture.
  • Pre-heat a Belgium style waffle iron
  • Scoop batter into the waffle iron, fill almost full
  • Cook until light brown and crispy
  • Serve with fresh fruit.

    I love how you explain your mornings. Mine is very similar.. 🙂 Unfortunately I do the same thing when it comes to breakfast, many times I´m not hungry and when I am, I don´t eat healthy. These waffles look super easy to make!

      It definitely will be liquid-y, So you definitely want to cook it long enough to get crispy on the exterior. But you may need to beat your egg whites longer.
