The weather is changing. The nights are growing cool. And the pumpkin patches and corn mazes abound. Honestly, I am pretty excited about this because lately, all I want to wear are cozy sweaters, gorgeous fall colors, and scarves. So I welcome the cool weather. And the delicious Fall foods…pumpkin, apple cider, soups, and football themed snacks and appetizers like buffalo wings! All things worth celebrating, wouldn’t you say?
In the vein of wanting to celebrate all things Fall, I decided to throw a fun Fall party with my family. I wanted to keep things simple and cozy. We would eat a delicious meal, carve some pumpkins, and make easy homemade donuts!
To decorate, we pulled out some fun Harvest and Fall themed décor, pumpkins, and a cute turkey nut cracker I picked up at Target while getting the ingredients for dinner. I made a big pot of soup. Nothing says “Fall” to me the way soup does! And this soup is a vegan version of a family favorite–Taco Soup!
It is so good, and perfect for anyone, meatless lifestyle or not. We certainly aren’t meatless lifestylers, but I do appreciate ease, convenience, health, and flavor. And MorningStar Farms Grillers Crumbles offer all of that.
This soup is literally a matter of opening and dumping a bunch of ingredients into a pot. I do chop and sauté an onion first, but that is all the work required. In fact, it is so easy, I made a video showing you how. And it is only a minute and half long.
Before the soup though, we had a fun appetizer. It too is a MorningStar Farms product–MorningStar Farms Buffalo Wings! You can cook them in the microwave, and they taste great with sliced carrots, celery, and ranch. They make me think of Football. And they were so good I almost wanted to turn on a football game…almost!
And to drink we had cider. Because while pumpkins seem to take the spotlight of Fall, I can’t imagine a Fall without apples! I added cinnamon sticks to the table for stirring into your cider, and some flavor syrups for those that wanted to spice or alter the cider. It was fun, easy to customize, and delicious, just like the soup!
We enjoyed a delicious dinner, then headed out back to carve some pumpkins. After which we made super easy homemade donuts. I will be sharing that recipe in the future, so keep your eyes out!

Vegan Taco Soup
Ingredients
- 1 tbs olive oil
- 1 yellow onion
- 1 bag MorningStar Farms Griller Crumbles
- 2 cups vegetable broth
- 42 ounces diced tomatoes
- 15.5 ounce can of whole kernel corn
- 30 ounces of black beans 2 cans
- 1 Tbs Chili Powder
- 1/2 Tbs Cumin
- 1/2 Tbs Onion Powder
- 1/2 Tbs Garlic Granules
Garnish
- avocado
- cheese
- sour cream
- green onion
- chips
Instructions
- Heat oil in a heavy bottom soup pot
- Chop onion small, and saute in hot oil
- Add in MorningStar Farms Griller Crumbles, and seasonings
- Dump in all the other ingredients.
- Stir everything together and bring to a boil
- Cover, turn down, let simmer at least 20 minutes
- Enjoy with garnish!

Made this tonight! It was delicious and the entire family enjoyed it. I made both ground beef and Morningstar crumbles and had them as a topping rather than in the soup. This way everyone was happy. Next time I’ll be sure to have avocados and tortilla chips. I finished this with a dollop of Daiya cream cheese, some green onion and jalapeños oh and a squeeze of lime juice. Delicious!

You do not need to, and it makes the soup a little thicker. So up to you.

I was thinking I would use red lentils. Do you think that will work,? does it freeze well?

Disregard comment. I meant to post under another recipe. This recipe was perfect. I used a different brand of meat less crumbles because the brand you use is not vegan. I sub rotel to the tomatoes and added ranch for more of a kick. Thanks for the recipe. I plan to freeze it I preparation for our new born.
