Crunchy on the outside, moist and juicy on the inside, this Granola Crusted Raspberry Pomegranate Chicken is easy to make and packed with flavor!
I have said it before and I will say it again, chicken is the cheapest and easiest protein, so we make it a lot, but we certainly don’t like it to be boring, and this flavorful chicken is anything but boring!!!
Now why is this chicken so easy to make? Because to get this amazing crunchy crust I use an oats and honey granola.
Now I love this granola for many things. I take it in the car with me for when my family gets hungry while out running errands. I mix it into fruit and yogurt for a hefty snack, and I even roll chocolate dipped bananas in it. But this is probably my favorite way to use it, as it gives my chicken such a fantastic and flavorful crunch.
I just pop it in my food processor, and give it a few pulses to break it down a little, and use it to coat the outside. It is sweet, crunchy, and so darn good!
To make this chicken I simply coated the chicken in flour, then in an egg and pomegranate mixture, and then into the crushed up granola.
Then put it on a parchment or baking mat lined sheet, and bake it!
So at this point, you can pull it out of the oven and eat it as is. It really is delicious and fantastic, and something both my kids and my hubby enjoyed.
Or, you can do what I highly recommend and smother it in a Raspberry Pomegranate Sauce. Both the chicken and the sauce are really easy to make.
Let’s talk about this sauce for a minute. It is sugar free, dairy free, and packed with flavor. But it is also creamy, sweet, and has some tang thanks to the raspberries and pomegranates. and perfectly compliments the oats and honey brought to the table by the granola.

I made this chicken for dinner, but it really is very versatile. You could slice it and serve it over a salad with the sauce as a dressing, and eat it for lunch. Or make it in bite-sized pieces, and serve it with the Raspberry Pomegranate Sauce for dipping as an appetizer for your holiday gatherings.
