Do you guys remember the coconut mango chia seed pudding I posted a little while back? It was so good it got me thinking, and I had to experiment with other flavor combinations. My husband LOVES coconut cream pie, so this was a natural option.

I am not a huge breakfast food eater, so I loved having an option that tastes like dessert, but is actually healthy, and that I could make in advance so that in the morning hustle and bustle I am not trying to come up with something for me to eat while my kids have pancakes or cereal.

But it does not have to be eaten plain, I stirred in some vanilla greek yogurt, fresh berries, and granola, and had it for breakfast several days in a row, mixing in different stuff each day so I wouldn’t get bored. Then I ate it plain as dessert. Honestly, it is just yummy. Make some, keep some in your fridge, and eat it! It has great health benefits and tastes amazing.

The pudding takes all of 5 minutes to prep, and then you just let the seeds do their thing overnight. Magic. The pudding will keep for about 5 days in the fridge, so if you whip a batch up on Sunday, you’ll be on track to a happier, smarter and prettier you by Friday!Healthy, but tastes like dessert…this chia seed pudding rocks!!

How do you keep Chia seed pudding from clumping?

Over the course of the next half hour, whisk the pudding every ten minutes as it begins to thicken; this prevents the chia seeds from clumping. After the half hour is up, cover and keep refrigerated at least 3 hours or overnight. After 3 hours the pudding will have slightly thickened, but it will still be a bit runny.

Ingredients

  • 4 Tbs Chia Seeds
  • 1/2 Tbs Vanilla extract
  • 2 cups Coconut Milk boxed or canned, full fat
  • 1/2 cup sweetened coconut flakes
  • 1 Tbs honey

Garnish

  • Extra sweetened coconut flakes fruit, and granola

Instructions

  • Put all ingredients in a container with lid, stir well, making sure chia is well incorporated into the liquid.
  • Refrigerate overnight, or for 5-6 hours
  • Serve with sweetened coconut flakes garnish, fresh fruit, granola, etc.

    I am sooo looking forward to making this. I've recently learned about chia puddings. Soo yummy. I miss coconut cream pie as I can no longer eat dairy. Thank you for sharing. I'll make it tonight whether or not I have the flakes just because I know it'll be yummy.

    I left my mixture in the refrigerator overnight and it did not set up like a pudding. It has the exact same consistency as when I mixed it together. I'm not sure what I did wrong.

      Hmm I am not sure either. It might be the chia you used, try reducing the liquid if you make it again. I wish I could give you a more definitive answer, but I know this recipe has worked for me several times.

    This is absolutely wonderful! A can of coconut milk is 1 2/3 cups, so I just topped it off with half and half. I used unsweetened coconut and it was sweet enough for me. Thank you! This will be made often!
