Pbaked sour cream and onion chicken heroI know the holiday season is fast approaching, and that usually means family parties, music, and fun. But when I think family parties, music and fun, I usually think about summer!

Sure November and December have plenty of those things, but just think: summer concert series, family gatherings, BBQ’s, beach and pool days. All of those things speak to me of summer!

One of the biggest things for me when making summer fun and parties a success is the food! I absolutely love when I serve something that everyone loves from the kids to the adults. And this sour cream and onion chicken is a huge hit amongst the masses.

It is so easy to make too, baked, and easy to serve with fresh fruits, grilled corn, and of course chips! Sour Cream and Onion Pringles® to be precise.

We love having friends and family over for a backyard party. We serve great food, play the music loud, dance, play, and just have a good time.

This summer we took Pringles® cans and let the kids form a band. It was so fun to watch their lack of musical talent. They certainly take after me! Haha. Lucky for me, my kids don’t have to be good at playing music to enjoy it.

Sour cream n onion baked chicken breasts, easy to make and full of flavor

But let’s get back to this chicken. It is dipped in a sourcream and egg mixture, rolled in crushed Sour Cream and Onion Pringles® and baked to perfection! It is totally fun, and tastes great!

Ingredients

  • 2 lbs chicken breast
  • 1 large egg
  • 1/2 cup sour cream
  • 1 tsp onion powder
  • 1-2 Tbs milk as needed
  • Salt and pepper to taste
  • 1/2 a can of Sour Cream & Onion Pringles

Instructions

  • Preheat oven to 375 degrees
  • Portion your chicken as you see fit, I had small children eating, so I cut the breasts into smaller pieces.
  • In a shallow dish, whisk together the egg, sour cream, onion powder, and some milk to get a runny consistency.
  • Put Pringles chips in a food processor, and process until fine. About 30 seconds to a minute.
  • Salt and pepper the chicken, then dip in the egg and sour cream mixture
  • Roll in the chip pieces
  • Place chicken on a baking sheet sprayed with no-stick cooking spray.
  • Bake for 8 minutes, flip, and bake for another 8 minutes or until juices run clear when pierced with a fork (depends on the thickness of the chicken and how small you cut it. If cut into tenders, cook slightly less.
