I mean what a brilliant breakfast option! Plus if you are counting calories egg muffins do no have to put you over the edge.
Calories will vary based on the recipe. However, you can have an extremely low calorie egg muffin that combines eggs with egg whites and uses low fat ingredients like vegetables, resulting in egg muffins being as low as 50 calories each.
However, many egg muffin recipes, while still low calorie are probably closer to 150 calories.
If you want to keep egg muffins to as low in calories as possible either omit things like cheese and bacon or just be very mindful of the amount put in the recipe.
These buffalo chicken breakfast egg muffins are low calorie. Buffalo sauce, depending on the brand can have little to no calories and chicken while being a great source in protein, does not have to add to many unwanted calories to the dish.

If you are like me and prefer your egg muffins warm, no problem. If they have been stored in the fridge for later, this is no issue at all.
You can easily reheat your egg muffins in the microwave and it doesn’t take long at all.
Just put your egg muffin or egg muffins on a microwave safe dish and heat these egg muffin cups on high for about 30 seconds.
If you take these egg muffins out and feel like they could be a little bit warmer, simply heat them up for about 10 seconds or so more.

Don’t worry, neither has to be a huge task.
How To Get Egg Muffins Out Of Muffin Tins:
Make sure to grease the muffin tin ahead of time with cooking spray.
- Let egg muffins cool for a minute or so before getting them out.
- Cut around the edges of the cooled egg muffins with a knife.
Note: Usually just greasing the muffin tin and letting the egg muffins cool, results in eggs coming out without a problem. Cut around the edges as a last result.
Sometimes if you have had trouble getting the egg muffins out, there may be some egg stuck onto the pan. Don’t worry, this easy to make dish does not have to leave you with a difficult mess afterwards.
How To Clean Stuck On Eggs:
Baking soda isn’t just for baking. Make a paste with it and clean.
- Soak muffin tin in cold water for a few hours before cleaning.
- Use salt as a cleaning agent.
- Soak in hot water with white vinegar to make cleaning easier.
If you’re still having trouble scrubbing your tin, it could just be that the poor thing must be laid to rest because it has too much build up from over the years! Buffalo Chicken Breakfast Egg Muffins
Ingredients
- 10 large eggs
- 1 teaspoons sea salt or to taste
- 1/4 teaspoon black pepper or to taste
- 1/2 teaspoon garlic powder
- 1/3 cup Buffalo Sauce
- 1/3 cup green onions chopped
- 1 cup cooked chicken chopped
Instructions
- Preheat oven to 400 F.
- Get a 12 count muffin tin, and line with silicone liners, or use a silicone muffin pan. Or coat a regular muffin pan with non-stick cooking spray. Set aside.
- In a large mixing bowl, crack in eggs and whisk together with salt and black pepper.
- Add in all other ingredients
- Divide evenly into muffin tins filling each about 2/3 full.
- Bake in preheated oven for 14-16 minutes, or until set.
- Optional: Serve with a drizzle of buffalo sauce on top.
