Buffalo Chicken Breakfast Egg Muffins

Buffalo Chicken Breakfast Egg Muffins, changing the way you do breakfast, this egg muffin recipe elevates your basic breakfast food and provides a great zest of flavor.  Chicken and Buffalo sauce accompanied with eggs offers the perfect marriage of flavors for these egg muffin cups.

Buffalo chicken breakfast muffin tin eggs are great for when you want a nourishing grab and go breakfast choice that will wake you up in the morning and get you through the day.  Sometimes I like ham and cheese egg muffins, or Air fryer egg cups… but sometimes I want a little kick of heat with my breakfast.

This easy breakfast choice will get you out of your morning rut and make you feel energized and ready to go. Easy to make and even easier to take with you, Buffalo chicken egg muffins are the perfect busy week breakfast food.

Did I mention these are low carb? Keto Friendly? Delicious? I love keto pancakes, and I love keto granola, but these egg muffins are an excellent way to start the day. And they come in lots of different flavors:

  • Cheese and Veggie Egg Muffin
  • Ham and Cheddar Cheese Egg Muffins

How Many Calories Are In An Egg Muffin?

Egg muffins are one of my new favorite go to breakfast options.

They are easy to make, can be low in calorie, packed with protein, you can eat them on the go, and you can make them ahead of time.  I really see no downside to breakfast egg muffins.

I mean what a brilliant breakfast option!  Plus if you are counting calories egg muffins do no have to put you over the edge.

Calories will vary based on the recipe.  However, you can have an extremely low calorie egg muffin that combines eggs with egg whites and uses low fat ingredients like vegetables, resulting in egg muffins being as low as 50 calories each.

However, many egg muffin recipes, while still low calorie are probably closer to 150 calories.  

If you want to keep egg muffins to as low in calories as possible either omit things like cheese and bacon or just be very mindful of the amount put in the recipe.

These buffalo chicken breakfast egg muffins are low calorie.  Buffalo sauce, depending on the brand can have little to no calories and chicken while being a great source in protein, does not have to add to many unwanted calories to the dish.

How Long Can I Keep Egg Muffins In The Fridge?

I love that I can make egg muffins and have them all week long.  They are so good and nice to have on hand.

Make this egg muffin recipe at the beginning of the school week and have a nourishing breakfast all week long.  

Egg muffins can be stored in the fridge for up to five days.

Put your egg muffins in an air tight container and take them out of the fridge when ready to eat. My favorite storage containers are made of glass and I swear they keep food tasting even more fresh. Here is a link to those containers if you need to get rid of your old grimy plastic ones!

Breakfast egg muffins or muffin tin eggs can be eaten cold or warm.

I love egg muffins because not only are they a practical dish, there are so many varieties of egg muffin recipes.

One day I am making a cheese and veggie egg muffin and the next day I am making Buffalo chicken breakfast egg muffins.

Who would have thought that Buffalo chicken would ever be paired with egg muffins, but trust me it offers a great blend of flavors.

Plus, Buffalo chicken egg muffins store nicely in the fridge.  However, for this particular recipe I do recommend reheating the egg muffin.

I personally prefer Buffalo chicken breakfast egg muffins nice and warm.

How Do You Reheat Egg Muffins?

If you are like me and prefer your egg muffins warm, no problem.  If they have been stored in the fridge for later, this is no issue at all.

You can easily reheat your egg muffins in the microwave and it doesn’t take long at all.  

Just put your egg muffin or egg muffins on a microwave safe dish and heat these egg muffin cups on high for about 30 seconds.

If you take these egg muffins out and feel like they could be a little bit warmer, simply heat them up for about 10 seconds or so more.  

In no time at all you will warm, delicious, breakfast egg muffins.

Since you can store and reheat egg muffins, they not only make a great breakfast for a busy morning, they also make a great snack too.

Believe me these Buffalo chicken breakfast muffins are not only a hearty and nourishing breakfast choice, they are a great to have on hand for snacks.

I love breakfast and snacks that leave me full and ready to take on the day.

How Do You Get Baked On Eggs Out Of Muffins Tins?

Okay so now that I have hopefully gotten you excited about Buffalo chicken breakfast egg muffins, how do you get them out?  Or, how do you clean the muffin tins?

Don’t worry, neither has to be a huge task.

How To Get Egg Muffins Out Of Muffin Tins:

Make sure to grease the muffin tin ahead of time with cooking spray.

  1. Let egg muffins cool for a minute or so before getting them out.
  2. Cut around the edges of the cooled egg muffins with a knife.

Note: Usually just greasing the muffin tin and letting the egg muffins cool, results in eggs coming out without a problem.  Cut around the edges as a last result.

Sometimes if you have had trouble getting the egg muffins out, there may be some egg stuck onto the pan.  Don’t worry, this easy to make dish does not have to leave you with a difficult mess afterwards.

How To Clean Stuck On Eggs:

Baking soda isn’t just for baking.  Make a paste with it and clean.

  • Soak muffin tin in cold water for a few hours before cleaning.
  • Use salt as a cleaning agent.
  • Soak in hot water with white vinegar to make cleaning easier.

If you’re still having trouble scrubbing your tin, it could just be that the poor thing must be laid to rest because it has too much build up from over the years! Simply order this amazing silicone one from amazon right here, and make your life easier! All you have to do is pop the muffins right out with your thumbs!

What I really like about these egg muffins besides the taste is that they are easy to make and don’t leave you with a huge mess.

Ingredients

  • 10 large eggs
  • 1 teaspoons sea salt or to taste
  • 1/4 teaspoon black pepper or to taste
  • 1/2 teaspoon garlic powder
  • 1/3 cup Buffalo Sauce
  • 1/3 cup green onions chopped
  • 1 cup cooked chicken chopped

Instructions

  • Preheat oven to 400 F.
  • Get a 12 count muffin tin, and line with silicone liners, or use a silicone muffin pan. Or coat a regular muffin pan with non-stick cooking spray. Set aside.
  • In a large mixing bowl, crack in eggs and whisk together with salt and black pepper.
  • Add in all other ingredients
  • Divide evenly into muffin tins filling each about 2/3 full.
  • Bake in preheated oven for 14-16 minutes, or until set.
  • Optional: Serve with a drizzle of buffalo sauce on top.
