Air Fryer Egg Cups

Air Fryer Egg Cups:

Delicious eggs with mixed vegetables, cooked to perfection in the air fryer. These eggs are topped with cheese and garnished with chives.

Air fryer breakfasts are so amazing. Cooking eggs in a power air fryer is the perfect way to have a no fuss breakfast that is wholesome, nutritious, and simple.

Serve with a fresh fruit salad, and a nice Smoothie.

I love a good breakfast, whether it is an acai bowl, keto pancakes, or french toast casserole. But my mornings are always crazy busy, with trying to get kids out the door, homework folders signed, emails answered etc.

The easier a breakfast is the better. Most mornings I can’t stand over a stove or flip pancakes all morning when there are so many other demands on my time. Which is why I love these air fryer egg cups.

You just mix them up and stick them in the air fryer, then you can walk away, and focus on other things while they cook.

The eggs turn out with a fantastic texture, and are cooked beautifully, and only require a few minutes of your attention. Did I mention it is low-carb? Keto-friendly? Delicious! Ok, ok..

How do you cook eggs in an Air fryer?

The air fryer is the best! Here is why I love it:
  • You don’t need much oil to fry food… like almost none.
  • You don’t have to heat up the whole kitchen to cook.
  • Cooking time is reduced by 25-35% of normal cooking time.
  • It is energy efficient.
  • Splatters and messes are contained to the air fryer basket.

If you want to cook eggs in the air fryer, you just mix up your eggs, add the vegetables of your choice, portion them out, set your air fryer, and walk away.

For this particular recipe I cook the egg cups at 300 degrees for 12 minutes. Then I add cheese and cook for a couple more minutes.

The amount of time needed to cook the eggs depends on how large the ramekin is the eggs are in.

Customize your Egg Cups

One of the things I really enjoy about making these egg cups for breakfasts is I can mix up the egg mixture base, then each person in the family can customize what goes into their egg cup. It is like an omelet, but with no flipping, or watching the eggs cook.
My kids can add extra cheese, or their favorite vegetables.
Since I like low carb, I can eliminate things like tomatoes, and replace them with a lower carb alternative.
I like to chop up a variety of veggies once a week, as well as some deli meats, or cooked sausage and bacon. Then every morning, the whole family can quickly and easily assemble whatever egg cup variety they want.

Can you use silicone molds in air fryer?

As you can see from the photos, I use ceramic ramekins for these egg cups, but the best part of the air fryer egg cups is you can use whatever ramekins or molds you want to use. I have some silicone cupcake liners I use when making them for my youngest, as the ceramic ramekins are too big for her.
You can decide what size and type of mold is best for you. The air fryer works well with all types of baking tins, molds, or ovenproof dishes. This means they can be made of glass, ceramic, metal, or silicone.
A small gratin would work well too!

How do you reheat egg cups?

Eggs are one of the most versatile breakfast foods. While I have found I like making these best fresh, so to speed things up in the morning I chop a bunch of stuff once a week or so, you could make these in advance, and just reheat them. Or, if heaven forbid you have leftovers (unlikely), you can reheat them!
Leftovers can be stored in an airtight container in the fridge for about 4 days.
When you are ready to reheat them, you can pop the egg cup into the microwave and heat them until they are warmed through. Usually 30 seconds or so is all it takes to reheat the egg cups.

Cheese and Veggie Egg Cups

Cheese and Veggies egg cups, these egg cups are like a soufflé, they are easy to make, absolutely delicious, and packed with protein. These low-carb egg cups are the perfect keto friendly breakfast and so easy to make.

Ingredients

  • Non-stick cooking spray
  • 4 large eggs
  • 1 cup diced veggies of choice
  • 1 cup shredded cheese
  • 4 Tbs half and half
  • 1 Tbs chopped cilantro
  • Salt and Pepper

Instructions

  • Grease 4 ramekins
  • In a medium bowl, whisk eggs, vegetables, half the cheese, half and half, cilantro, and salt and pepper together.
  • Divide between the ramekins
  • Place ramekins in the air-fryer basket, set temperature to 300 degrees F for 12 minutes.
  • Top the cups with remaining cheese.
  • Set air-fryer to 400 degrees F, cook 2 minutes until cheese is melted and lightly browned.
  • Serve immediately.

      You can make them ahead and just reheat, but I might suggest making all of the mixtures up, and cook them fresh as it only takes a few minutes.

      You can add time. Unfortunately every air fryer is a little different, and the size and shape of your ramekin will make a difference too. Try adding a couple minutes.
