Butterscotch Coconut Syrup & Protein Waffles

Butterscotch Coconut Syrup that is rich and creamy, and can be made in just a few minutes on the stove top! You will never want any other syrup again.

You may remember that I have a son who has been struggling in school this year, so we started him with a tutoring center that works on cognitive, physical, auditory, and other therapies to help kids get where they need to be. Well, he is progressing, and one of the things that has made a difference has been some small changes to his diet. We have been focusing on giving him more high protein foods, and fewer carbs. We are also working on cutting out the sugar. You may remember these Chocolate Fudge Protein Waffles that were such a success for us.

Breakfast has been on of the hardest places to do this, as he loves cereal, waffles, pancakes, etc. These waffles are my solution, they are protein waffles, made with protein powder and egg whites. They are awesome, taste great, and my son LOVES them. I teamed up with his tutoring center to help them create a series of recipes that are good for kids, and good for learning, and today I am sharing a protein waffle breakfast sammy on their blog. It uses these protein waffles, egg whites, and ham to create a savory, filling, and totally kid friendly breakfast. These sammys are so good, but sometimes I am not in the mood for savory in the morning and I just want something sweet. Right? This butterscotch coconut syrup is certainly not sugar free, or anything, but it is better than traditional syrup, and tastes like bits of golden heaven.We figure the good in the waffles can help to offset the not-so-healthy deliciousness of this syrup…right?

Butterscotch coco syrup 2I don’t know about you guys, but butterscotch is one of my favorite, but under-utilized flavors. It is like I forget about it. But not today. Now I am going to probably eat it on everything. This syrup is so good, I dipped waffles in it, poured it over ice cream, and um…well, let’s just say there were a few spoonfuls that did not make it on anything before reaching my mouth.

And did I mention how easy it was to make? Okay, here’s the recipe:

Butterscotch Coconut Syrup Protein Waffles

Creamy, coconut-ty syrup, perfect for breakfast, but yummy enough for dessert!

Ingredients

  • 1/4 cup butter
  • 3/4 cup full fat coconut milk I used the canned kind because it is thicker
  • 1 Tbs brown sugar
  • 1/2 cup butterscotch ice cream topping
  • 7 egg whites
  • 1 tsp Stevia
  • 3-4 Tbs Vanilla protein powder
  • 1/2 cup oats ground into flour

Instructions

  • Put all ingredients in a thick bottom pot, and stir while bringing to a boil
  • Boil for 1 minute, then turn on low and continue to stir until sugar melts and ingredients are well combined.
  • Put in container of choice and chill
  • Serve!
  • Beat 7 egg whites in a mixer on high for about 1 minute
  • Grind oats in a blender until they are a flour, then add oat flour, Stevia, and Protein Powder to the mixer
  • Mix for another 2 minutes or so while you are heating your waffle iron
  • Pour approximately 1/2 cup batter into sprayed waffle iron, or 3/4 cup into Belgium Waffle Iron
  • Cook 4-6 minutes or 5-8 for Belgium, until puffy and desired crispiness is reached.

    We have really cut back on sugar this year. It is amazing how things taste too sweet now. This sounds like a perfect way to start the day.
