Cheesy BBQ Pork Cups

A delicious biscuit cup stuffed with Cheddar Cheese and BBQ pulled pork, then baked to perfection! Great for a holiday appetizer or a meal. This recipe is something else. Simple “cupcakes” filled with stringy, gooey, cheese, and tender, moist, bbq pork! With literally only 3 ingredients I give you these beauties.

Serve them with Berry Feta Spinach Salad for a complete meal.

I mean, look at this soft and fluffy biscuit stuffed with gooey cheese, and delicious pork. Don’t you just want to sink your teeth in? I am pretty sure if you were to take this to a holiday party you would be the hit! No one has to know that it took about 5 minutes of your time, and only 20 minutes to bake.

Hey, I am a busy woman! Running kids here and there, working all the time, and trying to fit in a moment to sleep and eat, having something that is both impressive and delicious is always a plus for all those holiday parties.

What You Need

  • Biscuit Dough: You can use store-bought biscuit dough for convenience. Or if you feel ambitious, make your own with this Buttermilk Biscuits recipe.
  • Pulled Pork: Use leftover pulled pork or store-bought pulled pork for this recipe. When I am in a rush, I love a tub of the pre-cooked bbq pulled pork, it works great.
  • BBQ Sauce: Your favorite BBQ sauce to mix with the pulled pork. This is not completely necessary, especially if you are using leftovers that are already seasoned. But if you want it extra saucy, mix some bbq sauce in.
  • Cheese: Shredded cheddar or your preferred cheese.
  • Muffin Tin: To bake the cups in.

How to Make Cheesy BBQ Pulled Pork Cups

  1. Preheat Your Oven:
    • Preheat your oven to 350°F to ensure it’s ready for baking.
  2. Prepare the Biscuit Dough:
    • Open the can of biscuit dough and separate the biscuits. Flatten each biscuit into a circle that’s large enough to line the cups of a muffin tin.
  3. Line the Muffin Tin:
    • Spray the muffin tin with non-stick cooking spray. Press each flattened biscuit into the cups of the muffin tin, creating a small bowl shape.
  4. Fill with Pulled Pork:
    • In a bowl, mix the pulled pork with your favorite BBQ sauce until well coated. Spoon the BBQ pulled pork mixture into each biscuit cup.
  5. Add the Cheese:
    • Sprinkle a generous amount of shredded cheese on top of the BBQ pulled pork in each cup.
  6. Bake:
    • Place the muffin tin in the preheated oven and bake for 20-22 minutes, or until the biscuits are golden brown and the cheese is melted and bubbly.
  7. Cool and Serve:
    • Allow the Cheesy BBQ Pulled Pork Cups to cool for a few minutes before removing them from the muffin tin. Serve warm and enjoy!

I am going to let you in on a little secret! To make things easy and even faster on the day of, make your pork in advance. BBQ pork freezes really well. So prepare for that crazy busy party time, and make a bunch of BBQ pork now. Divide it into smaller portions, and put it in quart sized freezer bags. Then just pull out what you need the day of the party!

Then you get these awesome light, fluffy, and delicious pork cups filled and topped with cheese! Yum.

Tips and Tricks

  • Use Leftovers: This recipe is a great way to use up leftover pulled pork from a previous meal. Even Cajun Pulled Pork would be great here.
  • Customize Your Cheese: Feel free to use any type of cheese you like, such as mozzarella, Monterey Jack, or even a spicy pepper jack.
  • Add Extras: For extra flavor, consider adding diced onions, jalapeños, or a dollop of sour cream on top. Have fun with it. I loved dipping them in Tomatillo Dressing.
  • Make Ahead: You can prepare the cups ahead of time and store them in the fridge until you’re ready to bake.

Serving Suggestions

  • Party Platter: Arrange the Cheesy BBQ Pulled Pork Cups on a large platter for a party or gathering. Serve with a Crudite Platter with Roasted Veggies, and Hummus Appetizer for an awesome party spread.
  • Family Dinner: Serve with a side salad or coleslaw for a complete meal.
  • Game Day Snack: These cups are perfect for munching on during the big game, paired with other finger foods. They are great with Buffalo Wings and Spinach Dip for football tailgating parties.

Ingredients

  • 1 1/2 cans biscuit dough 12 biscuits
  • 1 cup Cheddar Kraft Natural Shredded Cheese
  • 1 cup BBQ shredded pork
  • non-stick cooking spray

Instructions

  • Preheat oven to 350 degrees
  • Spray a 12 cup muffin tray with non-stick cooking spray
  • Place one piece of biscuit dough in each cup, and press down the center
  • Sprinkle the bottom with Cheddar Kraft Natural Shredded Cheese
  • Use already prepared BBQ pork (I cooked mine in the slow cooker with some BBQ sauce) and put a heaping tbs into each cup. There are 16 tbs in a cup, and you want to evenly spread the cup of shredded pork across the 12 cups.
  • Sprinkle Cheddar Kraft Natural Shredded Cheese on top
  • Bake for 20-22 minutes until biscuits are golden and cheese is melted.
