Crispy Parmesan Roasted Edamame
Delicious and protein packed edamame roasted in the oven with some olive oil and parmesan cheese for a quick, delicious snack.
Pair with fresh cut veggies and dill dip, hard boiled eggs, and a summer fruit salad for great healthy snacks!
Edamame is one of our favorite snacks, and often we just pull i tout of the freezer, warm it up and eat it with salt. Especially if it is still in the pods.
But I was making this delicious Kale, Quinoa, and Edamame Salad and I had some shelled edamame left from the bag that I opened for the salad. So, for my kiddo’s after school snack, I made this yummy Crispy Parm Edamame. It is really fast and easy, and tastes great. And I think the bag cost about $2, so it is cheaper than potato chips, and Edamame has lots of protein!
It turned out wonderful, and we started making it on the regular because it is a quick snack that offers some easy nutrition.
Crispy Parm Edamame
Ingredients
- 12 ounce bag of shelled edamame
- 3/4 tbs olive oil
- 1 tbs parmesan cheese
- salt and pepper to taste
Instructions
- Rinse edamame so not frozen togehter, or thaw. Then pat dry
- Toss with olive oil and parmesan cheese, coating each one evenly
- Spread on baking sheet, make sure they have room.
- Sprinkle with salt and pepper to taste
- Bake at 400 for 15 minutes or until crispy
