KRAFT MAYO SPICE CAKE and caramel eggnog glazeLet’s talk about mayonnaise… It has a lot of uses, from Artichoke Dip to a nice sandwich spread, but how do you feel about putting KRAFT Real Mayo Mayonnaise in cake?

Now wait a minute…don’t click away just yet. I am totally serious. You can use it in place of oil, and it makes your cake so incredibly moist and fantastic!

I love a good cake recipe during the holidays, but let’s face facts for a second…most of the time, for me, the cake gets left for last because there are so many other amazing goodies, and cake is usually a little blah! Unless a cake is dripping chocolate and caramel, I usually head for the toffee, the special cookies, and the homemade mints and caramels. But not this one. This cake is no one’s second dessert choice. It will be the star of your party.

This method of using mayonnaise is traditionally used with chocolate cake, but since we have a lot of other chocolate holiday treats I wanted to mix things up. So spice cake it was, and I am so glad that is what I landed on.

Glazing the mayo spice cakeNot only is it delicious, it is eazy peazy to make. A real show stopper that offers great flavor as well as almost no work? Yup! Even the glaze was ridiculously easy to make. All you have to do is head to your local Walmart and pick up a jar of KRAFT Real Mayo Mayonnaise, eggs, and a cake mix. Some prepared caramel, egg nog, and powdered sugar.

mayo aisleThe glaze really compliments the spice cake flavor, and offers another element of holiday spirit with the eggnog. But my favorite part is that it has caramel! I just love all things caramel, and I never would have guessed what a perfect combination this glaze was going to turn out to be. Happy accident.

Ingredients

  • 1 box spice cake mixture
  • 3 eggs
  • 1 cup ice cold water
  • 1 cup KRAFT Real Mayo Mayonnaise

Glaze

  • 1 cup powdered sugar
  • 2 Tbs prepared caramel dip
  • 2 Tbs Eggnog

Instructions

  • Preheat oven to 350 degrees
  • Grease a bundt cake pan
  • Combine cake mix, eggs, water, and mayo on low speed for 30 seconds.
  • Then mix on high for 3-4 minutes
  • Pour batter into bundt cake pan
  • Bake for 32-38 minutes or until toothpick inserted in cake comes out clean.
  • Let rest for 10 minutes, then transfer out of pan onto wire cooling rack
  • Let cool an hour
  • Mix frosting by beating together all ingredients, drizzle over top of cake and enjoy!

    My mother made a mayonnaise cake back in the 40's. She also made a hamburger cake, adding hamburger to her cake batter (from scratch only). She also made a beet cake from ground beets. Does anyone have these recipes?
