I never feel like I have time to eat breakfast in the mornings. It is like the second I wake up I am running. And while that is normal, it is nice to have a quick and easy breakfast option that is not only convenient, but enjoyable!

It makes me a much happier mom to eat breakfast. And when I get to eat something as yummy as Quaker Real Medleys Yogurt Cups, that happiness grows exponentially. When you add in this delicious lemon quick bread, it is like breakfast heaven.

Occasionally I pick breakfast up at a coffee shop that offers oatmeal, parfaits, and delicious breads along with an assortment of beverages. They have a drive through, so it makes it easy for me when I have a car full of kids. And I always order some sort of quick bread. My favorite is the lemon loaf!

When I saw the Strawberry and Almond Quaker Real Medleys Yogurt Cups, I knew I wanted to eat it with a slice of lemon quick bread. There is just something about berries and lemon that just go well together. And I love it! So I decided to make my own.

And not only was it far easier to make than I anticipated, and tasted WAY better than the lemon loaf I usually buy at the coffee shop, but it really was the perfect compliment to the new Quaker Real Medleys Yogurt Cups.

Let’s talk about the cups for a minute. They are a new product that just requires cold milk to activate the yogurt and result in a tasty meal. There has been nothing like this before, Real Medleys is a blend of yogurt and multigrain granola, real fruit, and crunchy nuts. It is the first shelf-stable convergence of granola, fruit, and yogurt, all in one. And it fits my personal philosophy for all foods: “The easier the better!” All you have to do is add COLD milk, stir, and wait a couple minutes, and then you get that “Crunchy. Cool. Yum” they are known for.

I feel like my breakfast neglect is finally being addressed. I can make a loaf of lemon quick bread during the day, at night, or whenever I feel like it, and in the mornings, when I am rushing and crazy busy with my kids, I can cut myself a slice and enjoy it with 25 satisfying grams of whole grain and 10 grams of protein found in Real Medleys!

Despite my busy schedule, I think I can find the time to just add cold milk, stir, and eat! Don’t you? Plus, how great would these be for a road tripping breakfast? Delicious and convenient. Lemon Quick Bread

Ingredients

  • 3 eggs
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • zest of 2 lemons be sure to zest directly into bowl in order to get all the flavor
  • 2 Tbs Lemon Extract
  • 1 cup all purpose flour
  • 1/2 cup oat flour create by blending oats in a blender until they reach a flour consistency
  • 2 tsp baking powder
  • 1/2 tsp salt

Instructions

  • Preheat oven to 350 degrees
  • Spray a 9 x 5 inch loaf pan with non stick cooking spray and set aside.
  • In a large bowl, whisk together the eggs, sour cream, sugar, and vegetable oil until smooth
  • Zest lemon into the mixture, and stir in lemon extract
  • In a separate bowl combine all purpose flour, oat flour, and baking powder and salt, and stir to combine
  • Combine wet and dry ingredients, until just mixed, will not be totally smooth
  • Pour into prepared baking loaf pan
  • Bake for 55 mins, or until toothpick inserted into the center comes out clean
  • If the top begins to brown too much, tent with foil
  • Let cool completely before slicing
