Creamy Cucumber Salad
Ingredients
- 2 medium-large English Cucumbers
- 1 tsp Kosher Salt
Sauce
- 2 Tbs White Vinegar
- 2 Tbs Fresh Dill Weed
- 1 Tbs White Sugar
- 1 tsp garlic powder
- ½ tsp fresh ground pepper
- ¾ cup Kraft Avocado Oil Mayo
Instructions
- Cut cucumbers lengthwise.
- Using a small spoon, scrape the seeds out of the middle.
- Now chop cucumbers into smaller pieces
- Toss with salt
- Lay out flat on a baking sheet, with a paper towel under the cucumbers, and let sit for 30 mins to an hour. This will help draw out moisture.
- Meanwhile, mix together sauce by combining all sauce ingredients into a large bowl, and whisking until smooth.
- After the allotted time, take an additional paper towel, and blot the cucumbers dry.
- Put cucumbers in large bowl with sauce, and stir to coat evenly.
- Refrigerate until ready to serve.
- Serve in a pretty Summer Bowl.
