Oh my gosh you guys, this is one of the easiest, and yummiest pie bites ever! And perfect for when you have an apple or two you want to use up.
Do you ever just want dessert, but only for you? Or you don’t want an entire apple pie, but you want some apple pie? That is where these little babies come in handy. One apple makes about 6 muffin tin size bites, and you can make it in under 30 minutes, making it the perfect quick treat. Here is how you make it!
But let’s get back to these apple pie bites. They just use cinnamon and sugar, but you can add a little nutmeg or lemon juice if you want. I really wanted the salted caramel to steal the show, so I kept the spices low!
Then I drizzled on tons of caramel. Tons and tons. Both before and after baking. In my recipe I tell you to do it before. That is the most important part, but after is important too if you want extra gooey, delicious caramel flavor! Yum!
Truthfully, I never was a big fan of baked fruit. But baked fruit smothered in salted caramel is the bomb! Yes, I still say that. I know it was from like 10 years ago. Maybe I should say bomb (dot) com so I date myself even more. Hahahaha
Great Tips For Homemade Pie Crust
- Keep all ingredients cold, such as using butter right out of the refrigerator and ice-cold water to mix the dough.
- Use the least amount of water necessary to make the pie crust hold together.
- Egg yolk adds more fat and natural lecithin, which makes the dough easier to handle.
- Add 1 tablespoon lemon juice or vinegar to recipe to make crust more tender.
- To prevent development of gluten, do not over-handle the pie crust.
- Chill dough in refrigerator, until ready to use.
- Use a heat-resistant glass pie pan for the flakiest results.
- Follow pie recipe instructions for baking time, and back in the lower third of the oven
- To prevent excess browning of the edges during baking, cover the pie edge with a 2- to 3-inch wide strip of aluminum foil, and mold lightly around the edge of the pie. Bake as directed, removing the aluminum foil 15 minutes before the end of the baking time. Alternatively, buy easy-to-use adjustable pie-edge protectors here.

Mini Muffin Tin Salted Caramel Apple Pie Bites

Instructions

- Chop the apple into small, bite sized pieces.
- Add in butter, sugar, and cinnamon, and stir to mix thoroughly, and to insure the butter is well distributed.
- Spoon into muffin tin cups.
- Drizzle caramel over the top.
- Sprinkle some salt over the top.
- Cover or decorate the pie bites with the remaining pie crust/dough as you like.
- Bake at 425 for 15-20 minutes, until golden brown
- Remove from oven, add more caramel and salt if desired (trust me, you should desire it)
