Hi there, Eazy Peazy Mealz readers! Sarah here from Whole and Heavenly Oven again. I’m seriously SO excited to be back again to share another amazing recipe with you all!

And just in case you happen to be interested…that recipe would be dessert. Oh heck, yes, we are doing dessert today. Dessert that just so happens to be (a) No-bake. (b) Unbelievably easy (c) Lighter on the calories!!

Lighter No-Bake Peanut Butter Banana Pie

Which brings us to (d) It’s PIE time! Allow me to introduce you to Ms. Lighter No-Bake Peanut Butter Banana Pie! Trust me, you want to get to know this one.

So here’s the deal with this pie. The simple fact is that you’ve GOT TO TRY IT! I honestly have never been more in love with a pie. It’s creamy, luscious, packed with peanut butter and banana flavor, seriously so easy to make, and honestly you’re going to want to eat it all.the.time for the rest of summer and maybe even beyond that.

First off, let’s talk about the crust! Since we’re doing a LIGHT twist on peanut butter pie, our crust is a little bit different. Walnuts, agave or honey, a pinch of salt, and a few tablespoons of milk all ground up in the food processor make up our perfect pat-in-the-pan crust.

Filling time! Wipe that food processor clean and throw your ripest banana, lots of peanut butter, a little greek yogurt, vanilla, agave or honey, and a splash of milk inside and let ‘er whirl!

The filling goes straight into the crust and then the whole thing goes in the freezer for about 6 hours until solid. I know, it’s so hard to wait!

A short while later…garnish the top of your perfect peanut butter pie with banana slices and a handful of chocolate chips…I mean of course!

Ingredients

Crust

  • 2 cups chopped walnuts
  • 1/4 teaspoon salt
  • 1 tablespoon agave or honey
  • 3-4 tablespoons milk

Filling

  • 1 medium banana
  • 1 cup creamy peanut butter
  • 1/4 cup milk
  • 1/2 cup Greek yogurt
  • 1/2 cup agave or honey
  • 2 teaspoons vanilla extract
  • Sliced banana and chocolate chips for garnishing

Instructions

  • Make the crust: Place walnuts, salt, and agave in a food processor and pulse until mixture is crumbly. Drizzle in enough milk to form a ball of dough. Remove dough from food processor and press in the bottom and up the sides of a greased pie plate. Set aside.
  • Make the filling: Place banana, peanut butter, milk, yogurt, agave, and vanilla in a food processor and pulse several times until smooth and creamy. Pour filling into crust and cover with plastic wrap. Freeze pie 4-6 hours or until solid. Store pie in freezer until ready to serve. Garnish pie with sliced banana and chocolate chips. Slice pie into wedges and serve.
