I am borderline pina colada obsessed. I love the creaminess and smoothness, and that I don’t have to have dairy to get it. I am borderline lactose intolerant, and sometimes I just don’t feel like dairy,  but want a hint of creaminess and a drink reminiscent of my favorite tropical treat. A Pina Colada.

If you want a taste of sunshine, and a fun fresh smoothie bowl, this Pina Colada Smoothie Bowl is just what you need. A tropical fruit blend complimented with Silk’s Coconut Milk will bring an added dimension to your smoothie bowl.   A slice of paradise that you will crave for days to come.

Let me first start out by telling you my inspiration for the Pina Colada Smoothie Bowl. It was a typical, unfortunately cold day here in Utah, and I was roaming the aisles of Target, trying to take my mind off the disappointment that it was cold despite the winter months being over. See Utah likes to play mind games with us, giving us a warm day, and following it up with snow.

As I browsed the aisles, I took my phone out of my purse and pulled up my cartwheel app. This is something that has become my shopping ritual at Target. I love this app. It is super easy to use and being the bargain shopper that I am, I love an app that is designed to tell me offers and deals at Target, so I don’t miss out.   It has completely changed my shopping experience.

I was putting offers into my account, in order not to forget about the deals, and I accidentally pressed another button on my phone, which took me to the seven day forecast.  And I saw sunshine! That little sun icon was beaming out of my phone screen taunting me.  The forecast called for future temperatures in the 60s and 70s in the week. The dark cloud of pessimism initiated by the weather began to part, and I again began to enjoy my time alone shopping.

With encouragement that we are not doomed to walk outside in the cold forever, I put my phone back in my purse and I continued to peruse the products at Target. I wanted a treat to celebrate the future sunshine. I saw ice cream, but knew I wanted something lighter.

When I saw Silk Coconut Milk  it hit me. Coconut! There’s something about coconut that says tropical to me. I began to think of palm trees, white sandy beaches with turquoise waters, and little cups of frozen drinks with umbrellas and cherries on top.

Smoothie Bowl Paradise

After daydreaming for far too long, I was inspired. I may have not been able to escape to the Caribbean that day, but I could definitely bring a hint of paradise into my home. With the weather getting nicer, and summer around the corner, whether I’m watching my kids swimming, hanging out on the back porch, or just starting my mornings with a more flavorful breakfast, an island inspired smoothie-like treat is just the solution. Anding Silk Coconut Milk was just the way for me to get that creamy, coconut-ty flavor!

Not too many ingredients are needed for this treat. I combined mangos, pineapple, a banana, and Silk Coconut Milk in my blender, and tossed in some coconut flakes for added body. And the result was a tropical, refreshing smoothie bowl that is great for breakfast, a mid-afternoon snack, or a light after dinner dessert.   For a thicker smoothie bowl, add more fruit, for a thinner smoothie bowl add more coconut milk. Then top it with extras for a fun treat and added benefits.

Tips for Pina Colada Smoothie Bowl

  • Pina Colada Smoothie Bowl is a great recipe on its own or base for other ingredients. Add spinach, chia seeds, and/or oats for a heartier breakfast smoothie bowl.
  • Pina Colada Smoothie Bowls can be topped with all sorts of things, including whip cream or cool whip with a cherry for a more festive dessert option.
  • Smoothie Bowls can be transported in mason jars and a cooler for a fun snack at the pool or lunch at a park.  I love these
    mason jarsBuy Now!
that have handles on them and lids to make them portable.
  • This Pina Colada Smoothie Bowl can be saved for the next day. Just put it in a container and freeze. Take out 20-30 minutes prior to eating.
  • Get a stronger Pina Colada vibe with added coconut flakes and banana or coconut cream!
  • Serve in a half cut pineapple that is hollowed out to make it more fun!
  • Garnish with extra goodies for added benefits. Chia seed, coconut flakes, and fresh chunks of fruit are my suggestion.

I love this Pina Colada Smoothie Bowl. It is a great treat all year round, but especially for this time of year as we are entering the warmer months. Grab some mango, pineapple, bananas, and Silk Coconut Milk and you have all the necessary ingredients to a delicious tropical feeling smoothie bowl. Also, if you haven’t already done so, do yourself a favor and download the Cartwheel app for Target and never miss a deal.    Because once you’ve tried this Pina Colada Smoothie Bowl, you are going to want to keep the necessary ingredients on hand.
