Let me first start out by telling you my inspiration for the Pina Colada Smoothie Bowl. It was a typical, unfortunately cold day here in Utah, and I was roaming the aisles of Target, trying to take my mind off the disappointment that it was cold despite the winter months being over. See Utah likes to play mind games with us, giving us a warm day, and following it up with snow.
As I browsed the aisles, I took my phone out of my purse and pulled up my cartwheel app. This is something that has become my shopping ritual at Target. I love this app. It is super easy to use and being the bargain shopper that I am, I love an app that is designed to tell me offers and deals at Target, so I don’t miss out. It has completely changed my shopping experience.
I was putting offers into my account, in order not to forget about the deals, and I accidentally pressed another button on my phone, which took me to the seven day forecast. And I saw sunshine! That little sun icon was beaming out of my phone screen taunting me. The forecast called for future temperatures in the 60s and 70s in the week. The dark cloud of pessimism initiated by the weather began to part, and I again began to enjoy my time alone shopping.
With encouragement that we are not doomed to walk outside in the cold forever, I put my phone back in my purse and I continued to peruse the products at Target. I wanted a treat to celebrate the future sunshine. I saw ice cream, but knew I wanted something lighter.

Not too many ingredients are needed for this treat. I combined mangos, pineapple, a banana, and Silk Coconut Milk in my blender, and tossed in some coconut flakes for added body. And the result was a tropical, refreshing smoothie bowl that is great for breakfast, a mid-afternoon snack, or a light after dinner dessert. For a thicker smoothie bowl, add more fruit, for a thinner smoothie bowl add more coconut milk. Then top it with extras for a fun treat and added benefits.
Tips for Pina Colada Smoothie Bowl
- Pina Colada Smoothie Bowl is a great recipe on its own or base for other ingredients. Add spinach, chia seeds, and/or oats for a heartier breakfast smoothie bowl.

Pina Colada Smoothie Bowl
Ingredients
- 1 cup fresh pineapple chunks
- 1 cup frozen pineapple chunks
- 1 cup frozen mango chunks
- 1 ripe banana
- Ice to adjust to desired thickness
- 1/4 cup coconut flakes sweetened
- Silk Coconut Milk approx 3 cups, but adjust according to desired thickness
Garnish
- Chia Seeds
- Coconut Flakes
- Pineapple boat
- blackberries
Instructions
- Combine ingredients in a high powered blender jar, and blend until smooth, adjusting to preferred thickness with added Silk Coconut Milk, or ice and fruit.

- Serve in a hollowed out pineapple half with garnish on top!
