These dairy-free crepes will transport you to France, and provide you with a flavorful breakfast, and some amazing me-time! These crepes are so good you won’t even need a filling.

What is a crepe?
A crepe is a very thin pastry. They can be savory for breakfast or sweet for dessert. They began with the Greeks and then after that to the French.
What you need to make crepes
- SO Delicious Original Coconut Creamer
- Sugar
- Vanilla: you can omit if you are making savory crepes.
- Eggs
- Butter: room temperature
- Flour
- Dash of salt
- Lemon: optional
Dairy-Free Crepes
Making Crepes
- Make a simple batter in your blender. I have a and use it all the time for so many different recipes.
- Then, pour batter into a heated frying pan or (but honestly the crepe pan isn’t required! I have used a Rapunzel sized frying pan for 8 years of regular crepe making now!).
- Now wait half and minute and then flip the crepes.
- After another half a minute or so, you finally have a perfect “me time” breakfast!
- Voila! Eat and enjoy!
What fillings go inside a crepe?
The best thing about making crepes, is you can customize them with all your favorite toppings and sauces.
Plus making them savory or sweet!
Savory:
- Ham and eggs
- Bacon and eggs
- Eggs
- Steak and mushrooms
- Fruit salsa
- Spinach artichoke
- Whole wheat
- Ham and cheese
- Mozzarella, tomatoes and basil
- Spinach, eggs and ham
Sweet:
- Nutella with fresh fruit- diced strawberries, bananas, peaches, apples or raspberries.
- Caramel sauce and sliced bananas
- Cannoli filling
- Lemon curd– 3 eggs whole, 1/3 cup fresh squeezed lemon juice and 1/2 cup sugar.
- Sweetened whipped cream and fresh fruit (peaches, strawberries, blueberries, raspberries)
- Yogurt
- Hot fudge sauce
- Maple syrup
- Boston Cream Pie
- Apple cinnamon
- Strawberry sauce
- Hot buttermilk syrup
- Brown sugar
- Powdered sugar
- Chocolate Buttercream Frosting
Tips for Perfect Crepes Every Time:
- Blender: mix the batter in a blender to prevent lumps.
- Resting: the batter needs to rest for at least 1 hour for soft and tender crepes.
- Non-Stick pan is key. You will have heat evenly distributed and your crepe will slide off.
- Cook: carefully cook over medium heat. Crepes are delicate and can burn easily.
- Butter: add flavor to the crepe as well as coating the pan. – But this will not make them dairy free, so keep that in mind.
- Measure: use the same amount of batter for each crepe.
- Tilting: moving the pan in a swirl and tilt motion will evenly distribute the batter on the pan to cook evenly.
- Serve: cover cooked crepes with a kitchen towel so they stay warm until ready to eat.

Dairy Free Crepes
Ingredients
- 1 cup SO Delicious Original Coconut Creamer
- 1/3 c Sugar
- 1/2 tsp Vanilla
- 3 Eggs
- 1 TBS Butter Room Temperature or 1.5 TBS Canola Oil
- 1 cup Flour
- Dash of Salt
Instructions
- In a blender combine all ingredients.
- Mix well, then let whip for an extra 30-45 seconds.
- In a nonstick crepe pan or a crepe pan sprayed with cooking spray, heated over medium heat;
- Pour about 1/4 cup of batter, and
- Quickly tilt pan from side to side in all directions to spread and cover the pan bottom with the batter.
- Cook for approximately 45 seconds, then flip and cook for another 30 seconds.
- Serve with Fresh Lemon Juice squeezed on top.
