My recipes are like my babies, and it is impossible to have a favorite. Just like with my kids, in moments one might be the one I like the best, but give it a few moments, and my mind might change. But when it comes to easy, affordable, amazing flavored foods that feed a crowd, this Slow Cooker Honey Lime Chicken is hands down the best. No competition.
Truth: I totally pick a favorite kid. What they don’t understand is, it changes.
I love when football season rolls around, and I have lots of excuses to feed people. Feeding people brings me a ton of joy. My poor neighbors probably get sick of me waxing on and on about this amazing thing I ate, or how they have to come try something. But I love foisting leftovers off on them. And I will always love cooking for people. And will always want to cook for tailgating. Especially if the food is amazing, and it doesn’t keep me stuck in the kitchen while everyone else is enjoying the game. However, sometimes when we have tailgating party, it ends up being a lot of people, and that can get a tad expensive if you don’t think ahead.
Part of thinking ahead for me is having a BUDGET FRIENDLY and EASY tailgate recipes that SCORES BIG on taste and shopping for everything I need for that recipe at Save-A-Lot. And trust me, with this Slow Cooker Honey Lime Chicken Taco Recipe, we are sure to have an epic tailgating party.
It may be the fact that I am a firm believer in Taco Tuesday, or that I could live off tacos. But this chicken is so flavorful, so tender, so moist, and so delicious, and when you add on things like fresh tomatoes, avocado, cilantro, onion, and cheese, it is a total touchdown. So no matter where you stand on the whole taco thing, your tastebuds will thank you for making this Slow Cooker Honey Lime Chicken.
I always make a huge crock pot full because I like it on everything. However, a little goes a long way with tacos, which is nice. Being able to dump everything into the slow cooker for a few hours, and let it do its thing, is awesome. But the best part is the results. The honey and lime compliment each other so well, and you get a slightly sweet, with a bit of zesty tangy chicken. The salsa verde adds some depth of flavor and mild spice. And all together it is something special.
You can add some hot sauce, or use a spicier salsa verde too if you want a little kick. Personally I think it is perfect because adults and kids both love it, and those who want more heat can customize right on their tacos.
Another huge perk of this Slow Cooker Honey Lime Chicken Tacos recipe is you can make it ahead for your tailgate party so you don’t have to be slaving over a grill, or trying to get charcoal to light, but instead can sit back, relax, and enjoy the company.
It is also seriously versatile. Having a good budget friendly chicken recipe in your back pocket for meal prepping, parties, or even a week night dinner is huge and this chicken fits the bill. You can use it to make nachos (a big favorite), burritos, enchiladas, salads, or tacos. Really the possibilities are endless. However, for tailgating, I love using this slow cooker honey lime chicken in tacos. I love to set up a taco bar so each attendee can assemble and customize their own.
And who doesn’t love a good taco bar? Especially one with all the fixings.

How long would it have to go in slow cooker if you decide to put it on LOW ? Thanks!
