This incredible burger tastes like something you would get from the best burger place around. The flavors are fun and Southwest in nature, with sweetly caramelized onions, roasted red peppers, cheese, and that chimichurri sauce. And it is all served on a brioche bun.

What You Need to Make Southwest Fajita Cheeseburgers
These burgers are easy to make, and take some basic ingredients, but offer incredible flavor your whole family will love. Plus the recipe is for more than just burgers, you get a side too! A tasty, delicious complete meal.

- Chimichurri Sauce with Olive Oil
- Monterey Jack Cheese
- Roasted Red Peppers

How to Make Southwest Fajita Cheeseburgers
Time needed: 30 minutes
Flavorful Southwest Fajita Cheeseburgers, juicy and delicious, and full of bold flavors.
- Prep
Preheat your oven to 425 degrees.
Cut ends off the red onion and cut in half lengthwise. Make the strips of onions about 1/4 inch. - Season & Roast Sweet Potatoes
Place sweet potatoes in a medium bowl. Drizzle with about 1 tablespoon cooking oil. Season with salt, a pinch of pepper and about half of the cumin, paprika and ancho spices. Stir to coat.
Spread your sweet potatoes out in single layer on a lightly oiled, foil-lined baking sheet. Roast for about 20 minutes. - Season Beef & Form Patties
Place ground beef in a bowl for sweet potatoes. Add 1 tablespoon of the chimichurri sauce with olive oil and about half of the Monterey Jack Cheese. Season with remaining spice blend and about 1/4 teaspoon salt. Mix throughly to evenly distribute ingredients.
- Cook Patties
Heat about 1 1/2 tablespoons cooking oil in a medium over safe sautè pan over medium heat until shimmering. Once pan is hot, add patties. Sear about 3 minutes on each side. Sprinkle remaining cheese over patties. Transfer to pan. Roast 1-2 minutes or until cheese is melted.
- Cook Onion & Peppers
Heat about 1 1/2 tablespoons cooking oil in a small sautè pan medium-high heat. Add onion to hot pan. Season with salt and pepper. Cook 4-5 minutes or until softened, stir occasionally.
Add roasted peppers and about 2 tablespoons water. Cook 1-2 minutes or until peppers are warmed. - Toast Cheeseburger Buns
Open brioche buns. Place buns directly on oven rack. Toast 2-3 minutes or until browned.
- Assemble your burgers!
Transfer buns to a cutting board. Spread about 2 teaspoons of the remaining chimichurri sauce over cut side of each bun. Top with a burger patty and the onion and pepper mix and enjoy!
Tips and Tricks
Making this recipe is Eazy Peazy but here are a few tips to make sure it turns out every time:
- Uniformly Slice: When you cut up your onion, slice it uniformly so it cooks evenly.
- Preheat Pan: I know it is tempting to pop your patties into the pan before it is hot, but don’t do it. They will get a better sear, flip better, and taste better if you wait for the pan to be hot. Trust me!
- Instant Read Thermometers Are Helpful: You want your burger cooked through, and an instant read thermometer helps with that. When you pop your burgers in the oven to finish cooking, an instant read thermometer can help you ensure you get it right.
- Watch Your Buns: When toasting the buns they can brown up quickly, so keep an eye on them because you don’t want them to burn.
Make Ahead and Storage
If you want to make this ahead, here is what you can do:
- Make patties. Cook patties. Cool patties and wait to assemble when ready to serve. Place in an airtight container in the refrigerator.
- Slice onions and cook with roasted red peppers. Let cool. Place in an airtight container in the refrigerator.
- Reheat burger patties in the oven at 425 degrees for 5-6 minutes, heat onions and pepper mix on stove top or microwave, then assemble and serve.
