I recently came to the realization that I am perfectly happy with meals that do not contain meat. I happily order the vegetarian or vegan version of many of my favorites when we are out to eat. In fact, this past weekend I was in Portland, and enjoyed Pad See Ew with extra veggies and no meat, and an Indian curry the same way. I like most foods just as well without the meat. But the one food I absolutely love, and haven’t really been able to find a satisfying substitution to meat for is tacos. I LOVE tacos. And while veggie tacos are great, there is just something about the texture of meat in tacos that I want, love, and don’t want to compromise on. Not to mention, I like the protein!
Well, this week for Meatless Monday I thought I would try tacos just one more time, and instead of ground beef I would use a meatless option–black bean burgers. So I bought Gardein Chipotle Black Bean Burgers, which are super flavorful. I cooked them according to the package directions, and chopped them up for my tacos. And guess what? They were fantastic! I did not miss the meat at all.
You guys, no one was as surprised as me by how much I enjoyed these Vegetarian Tacos! I already knew I like Gardein products, as I have made their Turkey Cutlets before, as well as their Sweet and Sour Porkless Bites, but I had no idea how great the flavors and “chew” would be in these tacos. I am a convert. But let me tell you a little more of what I liked.
The first thing I enjoyed was how quickly they came together. It took only a few minutes to cook the patties, then it was just a matter of chopping up veggies, and crisping up the outside of the taco shell. In literally 10 minutes I had dinner on the table. After a long day of work this made me very happy.
Next, I loved the depth of flavor. The combination of the chipotle black bean burger with the sweet corn, red peppers, red onion, crispy romaine, and cilantro was great. The addition of a squeeze of lime took it up another level. I cooked the tacos to crispy, so they had some texture and crunch. And honestly, it was such a simple meal, but so fresh and yummy, I am sure I will make it again and again.
Last, I loved how good for me they were. I didn’t use any fatty sauces, or anything, just fresh, simple, ingredients.

Chipotle Black Bean Burger Tacos
Ingredients
- 2 patties Black Bean Burger Gardein Chipotle Black Bean Burger Patties
- 1/2 cup romaine lettuce sliced thinly
- 1/4 red pepper sliced thin
- 1 Tbs red onion chopped small
- 2 Tbs cilantro
- 1/4 cup cheddar cheese optional
- 1/3 cup sweet corn
- 1/2 Tbs butter
- 4 corn tortillas
- 1 Lime
Instructions
- Prepare Gardein Chipotle Black Bean Burgers according to package directions
- Rough chop the Gardein Chipotle Black Bean Burger
- Chop red onion, red pepper, and cilantro into small pieces
- In a skillet, melt butter, and heat corn tortillas
- Sprinkle cheese over the top (optional)
- Top with rough chopped Gardein Chipotle Black Bean Burger, corn, 1/2 the red onion, and 1/2 the red peppers.
- Cook until the cheese melts
- Remove from pan, top with romaine lettuce, additional red peppers, red onions, and cilantro.
- Squeeze lime over the top, and enjoy!
