Beef and Vegetable Soup:
A flavorful soup packed with veggies and ground beef. Tons of flavor without a ton of work.
Serve with Garlic Bread Twists if you are eating bread!
I mention that this is Paleo because it fits the Paleo guidelines completely. I do not subscribe to Paleo as my personal dietary lifestyle, however a lot of people in my extended family have seen some pretty great weight loss results from going to a Paleo diet. I think Paleo has a few really great things going for it. The first is that you can eat all the veggies you want. Nom nom. The second is cutting out the sugars and the third cutting out white flour. Those are three areas I really need improvement on.
I love veggies, and I have been trying to up my intake. So, I have been experimenting in the kitchen trying to create dishes that my family enjoys that are packed to the gills with vegetables, and that fit the dietary restrictions of Paleo.
I will be sharing other Paleo friendly recipes, but all of them will be Paleo because of what they lack, not because I used coconut flour instead of white flour, etc. No expensive, ucky tasting substitutions for me, instead, fresh, healthy, tasty, and hey, if the whole foods I choose work for Paleo, then great! Go Paleo!
This particular dish was a huge success in my book. Soooooo tasty, and so good for you. Truthfully, if you are vegan, or vegetarian, you wouldn’t miss much flavor wise if you got rid of the beef and sausage. I love adding a little in for that richness it gives, but as a family we are trying to move closer to a plant-based diet. One step at a time though right? For now I am choosing grass-fed (no hormone) meats, and enjoying the results, even if I don’t enjoy the price tag.
This particular recipe made my kitchen smell so cozy and yummy. I could barely wait to dig in, and burnt my tongue because of my impatience. I hope you love it. If you want other Paleo friendly recipes, try this Spaghetti and Meatballs recipe. It is delicious.
Other Great Soups
Beef and Vegetable Soup (A bean-less paleo chili)
Ingredients
- 1/2 lb spicy sausage
- 1/2 lb ground beef
- 1/2 large onion diced
- 3 large zucchini cut
- 1 large yam diced
- 4 sweet mini bell peppers diced
- 6 carrots peeled and diced
- 6 stocks celery diced
- 11/2 Tbs minced garlic
- 32 ounces chicken or vegetable stock
- 2 cans diced tomatoes
- 1 tsp cumin
- 1/2 tsp paprika
- 2 tsp chili powder
- 1 tsp oregano
Instructions
- Brown sausage and ground beef.
- When meat is almost done, add in garlic and onions. Add zucchini, carrots, and peppers in, cook until just under tender.
- Put all other ingredients in a large pot, add in rest of ingredients.
- Bring to a boil
- Turn down and let simmer until vegetables are tender and flavors have had a chance to mix (30 mins)
