Hey guys, Laura and Sarah here from Wandercooks in Australia. We’re heading into winter here but dreaming of glorious summer nights around the grill (or barbecue as we call it 😛 ). We’re suuuuuper jealous of our northern-hemisphere friends enjoying early summer awesomeness while we’re pulling out jackets and scarves and cranking up the heater.
So! To bring back those summer vibes we wanted to share with you our all-time favourite family grill recipe. BBQ Basil Pesto Grilled Chicken is the one we always beg our mums to make on summer nights around the barbecue. And it’s also the one we’ll make at home when we want a deliciously satisfying dinner with minimal effort.
The good news is if you don’t have an outdoor grill, you can just as easily cook this on a stove top grill pan inside.
BBQ Basil Pesto Grilled Chicken ALWAYS tastes best when you use your own freshly made basil pesto. It’s something you’ll never regret taking the time to do because you can really tweak the ingredients to make it just how you like it. Plus, it’s so simple to make, all you need is some gorgeous fresh basil (bonus points if you grow your own), a handful of pine nuts, some garlic, grated parmesan and a good quality olive oil. Then you throw them into a food processor, blend for a few minutes, and your basil pesto is ready to go.
If you’re running out of time, you can always make this dish with your favourite brand of pre-made pesto. This will save you a bit of time and make it super convenient since you won’t need to buy or store any fresh ingredients. But it probably won’t have that same aromatic punch as your freshly made pesto. 😉
We normally serve BBQ Basil Pesto Grilled Chicken with other tasty barbecue sides like this super refreshing Watermelon, Tomato, Feta & Peppermint Salad. And of course, being Australian we wouldn’t forget the beef sausages or lamb chops on the grill too!
BBQ Basil Pesto Grilled Chicken
- 4 boneless chicken breast fillets at room temperature
- 1 cup basil pesto jarred or home-made
- Salt to taste
- Coat each chicken breast filled in pesto and sprinkle with salt. Refrigerate for minimum 30 minutes to overnight.
- Preheat an outdoor grill or grill plate on the stove. Once heated, place the chicken on the grill and cook for 5 minutes on each side. Remove from the heat, cover with foil and allow to rest for 5 to 10 minutes. This will allow the chicken to finish cooking through while staying juicy and tender.
- Serve as whole fillets or cut into slices.
