A flavorful chicken marinade that only needs 2 ingredients, and is awesome for summer grilling!
Summers are so fun around here. We tend to go go go all summer long, trying to get in as much fun as we can before it is back to school.
We do chores and reading, practice the piano, and try to have some down time. But once those things are out of the way it is out the door and to the park, the pool, the theme park, or somewhere else that gets us moving and spending time together. I Love It! But sometimes we get home and I am exhausted. So tired, don’t want to do anything, make anything, cleaning anything tired.
So on those nights we grill! And this is my go-to chicken marinade when I am feeling tired, rushed, or just want maximum flavor without a lot of effort. I am not trying to say it is not good, in fact, I often serve it to company. We like it that much. But it is also just so easy. It only has 2 ingredients, both of which I tend to keep in my pantry just for this chicken!
Trust me, you will love it. And you really only need maybe 15-30 minutes of marinade time, so I just put it over my chicken, turn on my grill, start cleaning and chopping some veggies to go with it, and by the time my grill is done heating and the veggies are chopped, the chicken is ready to go on. So you don’t even have to plan ahead. Although, the longer it marinates (up to 3-4 hours) the more flavor it keeps.
So what is this 2 ingredient wonder?
Zesty Chicken Marinade
Ingredients
- 1 cup Zesty Italian Dressing
- 1 cup Lemon-Lime Soda
- 2 pounds chicken breast cut into thinner pieces I usually cut mine in half so they are skinnier and cook up faster without the outside burning
Instructions
- Cut chicken into portions and put in a bowl
- Mix soda and Italian dressing together
- Pour over chicken
- Let marinade 15 minutes to 4 hours
- Remove from marinade and grill
