That’s right, summer is here and it’s time for all the fresh salads, grilled chicken and burgers you can cram into the season. Let’s give summer our best by including this Cucumber Radish Salad with Creamy Greek Yogurt Dressing in that fresh salad mix.
- 1 large cucumber, peeled and sliced
- 1 bunch of radishes, thinly sliced
- 1 small red onion, thinly sliced
- 1 (5.3 ounces) plain greek yogurt (apprx 2/3 cups)
- 2 Tablespoons garlic powder
- 1/2 lemon, juiced
- Large pinch sea salt
- In a medium bowl combine cucumbers, radishes, and onion,
- In a small bowl mix together greek yogurt, garlic powder, lemon juice, sea salt. Whisk together.
- Pour yogurt dressing over cucumber and radishes, mix well.
- Sprinkle salad with chives to garnish (optional)
