Hello to all you amazing food lovers! Lindsay again, here from over at Veggie Balance, stopping in this month to share with you a super simple and summery salad to throw together in a pinch.

The results? A fresh, crispy salad with crunchy cucumbers and radishes tossed in a lemon garlic yogurt dressing. #NOM!

I’ve made this favorite Cucumber Radish Salad of mine before in a traditional vinaigrette dressing. Changing up the dressing to an epic creamy dressing definitely won as the perfect combination for this salad.

All you need are 6-ingredients to create this Cucumber Radish Salad! Winner!!

I love cucumber salad, this Easy Asian Cucumber Salad has been a long time favorite. But sometimes you just want creamy, and this Cucumber Radish Salad with Creamy Greek Yogurt Dressing fits the bill for the many cookout extravaganzas I have planned for this summer.

There is also something to be said about eating at home after traveling. Home-cooked food tastes a billion times better upon returning.

The day we got back, we made buffalo grilled vegetables piled into buddah bowls and literally devoured them in under 24-hours! I don’t even know if we breathed between bites. It was splendid to eat locally grown food marinated in our favorite seasoning–Buffalo Sauce! 

Once you whip up this Cucumber Radish Salad with Creamy Greek Yogurt Dressing in less than 20 minutes, I recommend adding a personal favorite of mine for all salads: Fresh chives cut from the garden.

So freaking heavenly! Being able to walk out my back door and grab fresh herbs makes me so happy for summer to finally be here. I’ve missed my herb garden.

Chives, Lemon Thyme, Mint, Rosemary, Lavender, Sage, and recently planted Basil (since it doesn’t survive our winters). But everything else comes back every year!

Cucumber Radish Salad with Creamy Salad Dressing

Cucumber Radish Salad recipe with Creamy Greek Yogurt Dressing. Fresh crunchy slices of cucumber and radishes tossed in an easy lemon garlic yogurt dressing. Pure summer in a bowl.

Ingredients

  • 1 large cucumber peeled and sliced
  • 1 bunch of radishes thinly sliced
  • 1 small red onion thinly sliced
  • 1 5.3 ounces plain greek yogurt (apprx 2/3 cups)
  • 2 Tablespoons garlic powder
  • 1/2 lemon juiced
  • Large pinch sea salt

Instructions

  • In a medium bowl combine cucumbers, radishes, and onion,
  • In a small bowl mix together greek yogurt, garlic powder, lemon juice, sea salt. Whisk together.
  • Pour yogurt dressing over cucumber and radishes, mix well.
  • Sprinkle salad with chives to garnish (optional)
