EZPZ Cookie Butter Cups

Dark chocolate cups filled with cookie butter filling, and topped with fun toppings like toffee, almonds, pecans, and large crystal salt. The perfect not-too-bad for you indulgent treat!

*Due to many requests for explanation: Cookie Butter is a Biscoff spread. It is like peanut butter in consistency, but is made with Biscoff cookies (The kind you get on airplanes), and is seriously amazing. Sweet and yummy, and I make these awesome Cookie Butter Cinnamon Rolls with it that are to die for. You can buy it at Target, I have seen it at Kroger Stores, and you can get the Cookie Butter version at Trader Joe’s. It is very popular in Europe, where it is called Speculous. I hope you give it a try!

Guys, what do you say we just call this chocolate week? I mean, come on…is there anything better than chocolate? (don’t answer that). I have been really trying to get healthier, eat healthier, and not eat so much junk food. But, sometimes I just need a treat. I signed up for the Wasatch Back Ragnar relay. Which means I have to get my butt back into shape. I was in a car accident in August, and due to some injuries, I have not yet gotten back to exercising. So I am starting back up, and it is painful! Haha, I don’t know what it is about running, but when I run, I almost always want something sweet after.  Do you love peanut butter cups? I think they might be my favorite treat. Maybe…I mean it is a toss up, and tomorrow I am sharing another of my favorites. But peanut butter cups rate pretty high for me.

Well one day I was at Trader Joe’s which happens to be one of my favorite stores and they had these Cookie Butter Cups, so like peanut butter cups, but with a cookie butter filling. I ate one, it was delicious, and I have been wanting them again ever since. Well, the nearest Trader Joe’s is like 30 minutes away, so I do not go often. But that did not stop me. I decided to make my own. So glad I did because it was ridiculously easy, and they taste amazing. The hardest part was waiting for them to set up!

I already ate the whole batch, with the help of some little ones, and I think I need to make another batch stat! The trouble is these are mini, so to my mind that means eat 10! Haha. My lack of self control is astounding. But these were so much better than the filling. The toppings really put them over the top for me. I could not decide what I wanted on them, so I made some with just a sprinkle of large crystal salts. I made some with whole (raw) almonds, some with chopped pecans, and some a few with toffee pieces because I really, really, really LOVE toffee.

Ingredients

  • 2 cups semi-sweet chocolate chips
  • 6.8 ounces dark chocolate

Filling

  • 1 cup cookie butter
  • 3/4 cup powdered sugar
  • 1/4 cup butter
  • 1 tsp salt

Toppings

  • Large crystal salt
  • Toffee chunks
  • Pecan pieces
  • Almonds

Instructions

  • Mix together filling ingredients until combined and smooth, set aside
  • Chop up dark chocolate, and mix with semi-sweet chips, then melt in microwave in 30 second intervals.
  • Stir between each 30 second heating time.
  • Get a mini cupcake pan and line with mini liners
  • Spoon about 1/2-3/4 tsp of melted chocolate into the bottom of the liner
  • Spoon a tsp of filling mixture into the chocolate, press down a little, and then top with more chocolate (about a tsp)
  • Sprinkle on toppings of choice, and do the same until you have used it all! Should make 24-36 total
  • Put in fridge for 1-2 hours to let set up

So easy right? And how perfect would these be to have on hand when you want a little something delicious? Or even for a party? My whole family loved them. My husband ate half of them, and my kids ate 3/4 of the other half. So basically I HAVE to make more because I mean…I did not get very many of them.

      It is like peanut butter, but it is biscoff cookie flavored (The cookies you get on airplanes). It is delicious.

      I first discovered cooke butter when I was in Belgium. I got it on a waffle, and then immediately went and bought a HUGE jar. When it was gone I may have teared up. haha Glad I can buy it in the states.

    These look great! I’ve never seen that cookie butter, but there’s so much to see at Trader Joe’s it’s easy to miss things. At least mine isn’t 30 minutes away, so I can easily go check it out. Your cookie butter cups sound great!
