Are you guys Trader Joe’s fans? I feel like people either super love Trader Joe’s, or they are kind of anti. Haha. I guess there are ambivalent people too. I fall in the love range. I love certain products from there, like cookie butter cups, and yellow thai curry sauce. But one thing I was recently introduced to is their Ginger Miso broth.
It is basically a stock, like a chicken stock, but ginger miso flavored. This post is not sponsored, I just really like it, and love how easy it is. Those are flavors I love using in my cooking, so it is so fun to have a really easy way to get those flavors without any work.

Anyway, I was working at home, and had eaten one too many treats, and wanted something really fresh, light, and tasty, and THIS is the result of that craving. I sautéed a little garlic, spiralized a zucchini, threw in some sliced mushrooms, and of course that broth, and brought it to a boil.
Then I ate it. And was very, very, happy. The next day I repeated it and added corn and some shredded rotisserie chicken. It was also very delicious. So feel free to customize as you see fit. But if you want simple fare that is sure to please, this one is a real winner!
Like I always say to my picky eater, “Try it, you’ll like it!”
Ginger Miso Zoodle Bowl
Ingredients
- 1/2 tsp olive oil
- 1 tsp minced garlic
- 1 zucchini
- 1 box Ginger Miso Broth
- 1 cup sliced mushrooms
- Salt and pepper to taste
Instructions
- In a soup pot, heat olive oil
- Add minced garlic, and saute for 1 minute
- Add ginger miso broth
- Spiralize the zucchini
- Add zucchini noodles ("zoodles") to the ginger miso broth along with mushrooms.
- Bring to a boil, then turn down and let simmer 5 minutes.
- Season with salt and pepper to your personal taste
- Serve and Enjoy

Oh wow! This looks so healthy and tasty! I wonder if I could get my kids to do noodles…..?? I have to give it a try!
