I have been trying hard to stick to some of my resolutions, and one of them is eating less junk when snacking. Especially at night. I am pretty good when my kids are around, but after I put them to bed it is a different story! When I have a little kid-free me-moment I usually get a little wild, and by wild I mean I eat junk food!
The other night I ate an entire bag of cookies. Myself. Mindlessly munching. It is a real problem.
I like how all that junk food tastes, but hate all the rest. I figured something had to give, and it wasn’t going to be my me-time indulgence, it just had to be what I was indulging on.
One of my favorite treats are ice cream sandwiches. When I was a kid my mom used to hide ice cream bars in the freezer in our garage and I would catch her hiding out there eating them. Haha I swore I would never do that. I lied. Only for me it is ice cream sandwiches instead of bars. I hide them. And hide to eat them.
Basically I regularly hide from my children. #Momwin
Anyway, I wanted ice cream sandwiches, but wanted them to be guilt free. Sounds hard to accomplish right? Wrong! After a little trial and error I found a way to make 4 ingredient, totally guilt free, indulgent “ice cream” sandwich bites that I could feel good about eating! Here’s what I used:
Müller® Ice Cream Inspired Yogurt is awesome for making these little guilt free indulgent bites. Not only does it taste just like ice cream, it is a good source of protein (7g), has less sugar than other yogurts, and is absolutely delicious. Basically it is just the right amount of wrong. And when combined with these totally awesome guilt-free “cookies” I will show you how to make, you get an “ice cream” sandwich that has all the flavor and none of the guilt. You won’t regret this sweet little indulgence.

The “cookies” are made by food processing dates, nuts, and some dark chocolate and then pressing them into bars, shapes, etc. You can use whatever nuts you like best. I used peanuts because I love chocolate and peanut butter together. These are great because they are sweetened with dates (not sugar), and have lots of protein!
You make the centers using the same mold, just fill it with the yogurt, and pop it in the freezer until it sets up!
Then assemble! It really is that easy! Plus you can make a nice big batch and put them in your freezer to grab whenever you feel like it, breakfast, lunch, dinner, or sometime in between!
Guilt Free Indulgence Bites
Ingredients
- 10 Medjool Dates
- 1 1/3 cup peanuts raw or lightly salted
- 3/4 cup dark chocolate
- 1 container Vanilla Bean Müller® Ice Cream Inspired Yogurt
Instructions
- Put dates, peanuts, and dark chocolate in a food processor and process until finely chopped and mixed together
- Using a silcone mold (Any shape, even an ice cube tray will work) push the date and nut mixture into it to form a "cookie", you should use about half the mixture
- Remove "cookies" from mold and fill mold with yogurt, put in freezer for 30 minutes
- Remove frozen Müller® Ice Cream Inspired Yogurt bites from freezer and mold, and set aside (Put back in freezer so they don't defrost)
- Wash mold, then press more of the date and nut mixture in to make more "cookies"
- Remove yogurt bites from freezer, press between two of the cookies and enjoy!
Notes
If you do not like peanuts feel free to sub in another nut

I was on this campaign and couldn’t do it cause I couldn’t find the ice cream inspired yogurts anywhere. What walmart did you find these at? These little bites look delicious! (I was going to make grilled peaches, your nectarines look delicious too!)

Could you just put date mixture into 8×8 pan then top with yogurt and freeze that way? Or roll date mixture out like cookie dough, cut with cookie cutter and place on wire rack then pour yogurt over cutouts and freeze that way?

Fran You definitely can do it that way! Thank you for asking. I love the silicone molds because they are so easy to work with. If you are going to put it in an 8×8 pan I would suggest using parchment paper or something so it is easy to remove and cut into bars!
