The Lemon Whipped Cheesecake Triffles with  DOVE® Fruit Blueberries #yum

These cheesecake triffles are absolutely perfect for a girl’s night. Every year some of my girlfriends and I get together for a nice night out. We actually make it a weekend. We rent this amazing cabin, shop all day at the Outlets in Park City, eat tons of Mexican food, and talk, and talk, and talk. Then we usually sit in the hot tub and talk some more. I know…tough life.

All of that talking means we work up an appetite and so every year we each bring our favorite treat to share. Last year I brought these Sugar Coma Bars, which have 7 layers of well…sugar, in different forms, from brownies to cheesecake to cookie dough, to caramel. But this year I wanted to lighten things up a bit.

I have been searching for the perfect snack and while shopping at Walmart for supplies for our girl’s weekend I came across DOVE® Fruit, which by the way, I am totally obsessed with. It will change your life, not to mention your snacking habits. It is basically dark chocolate covered fruits like blueberries, cherries, and cranberries.

I am not sure which are my favorite as the combination of real fruit dipped in that amazing DOVE® Dark Chocolate we all know and love is awesome. But for today’s recipe I went with the Blueberry version because there is just something I love about lemon and blueberries together.

Anyway, I wanted an amazing treat to share at my girl’s weekend away, and so I created a lemon whipped cheesecake mousse. It is light, fluffy, and fewer calories than traditional cheesecake. But it needed something more. So I added the DOVE® Fruit Blueberries along with layers of fresh berries and graham cracker crumbles. And the results—Amazing!

Ingredients

  • 1 cup Lemon Pie Filling Premade
  • 1 pint whipping cream
  • 8 ounces cream cheese
  • 1/2 cup powdered sugar
  • 1 cup DOVE® Fruit Blueberries
  • 1 cup fresh blueberries
  • 1 cup crushed graham crackers crushed

Instructions

  • In a medium mixing bowl mix together the cream cheese, lemon curd or pie filling, and powdered sugar with a hand mixer.
  • In a high powered blender, blend whipping cream until it thickens.
  • Stir the whipped cream together with the cream cheese mixture, and put in a heavy duty bag (Freezer ziplock bag)
  • Cut the tip off the bag, and pipe the mousse into a cup layering with graham crackers, fresh blueberries, and DOVE® Fruit Blueberries.

I know I say it every time, but I think this might be my new favorite recipe! It is definitely going to be a new staple for girl’s night, and these DOVE® Fruit Blueberries are going into my regular snacking rotation. What are your favorite good for you snack options?
