Rotisserie Chicken Noodle Soup
Easy and insanely delicious Rotisserie Chicken Noodle Soup. Flavorful chicken, delicious vegetables, flavorful broth.
Fall is here! I know I am getting older because I now love Fall. Like seriously love it. I used to be a summer person, I mean what is not to love about summer? Sand, sunshine, sitting pool side, and all of that fun stuff. But now, summer is kind of more about remembering sunscreen, juice boxes, and sitting literally pool side with high anxiety, trying not to panic while my kids test their water wings.
Yeah… I am full fledge crazy and totally a mom. Embracing it!
Anywho…. I like Fall now. Boots, scarves, sweaters, and soup! Those are my top reasons for loving Fall. And while I put soup 4th on the list, it is really more like first! Foodie first, foodie all the way.
I love soup. I can’t even tell you how much I love soup! Why wouldn’t I like soup? It is SOUP-ER! Okay…I know, dumb joke, long day, let’s get to the point here, am I right? The point is…this Rotisserie Chicken Noodle Soup is easy because it uses a Rotisserie Chicken! You know, $5 at Costco, and no work. Yay!
Okay, so back to this Rotisserie Chicken Noodle Soup!
I make up for the pre-made chicken with tons and tons of amazing vegetables! And soup-er easy broth that is bursting with awesome flavor. (Would it be too much to say Soup-er again?…yes…yes it would! But it really is.)
I love this Rotisserie Chicken Noodle Soup because not only does it taste like the welcome to Fall (You thought I was going to say Soup-er didn’t you?) we actually ate half the rotisserie chicken for dinner the night before, then I made my stock, and used the other half of the chicken in this soup. So two dinners with one chicken. Perfect! It was rich and flavorful without being overpowering. And it was like wrapping up in a nice blanket.
I don’t know why but when I am thinking comfort food, and getting cozy I like to pull out my Staub Dutch oven pot. It is great for cooking stove top, baking in your oven, and is easy to clean.
But don’t worry, you do not have to make your chicken stock, you can just use some from a box.

Make It Eazy Peazy.
Chicken noodle soup is total comfort food, so cut yourself some slack and go ahead and buy the rotisserie, used canned broth, and make stock later if you really want to. If you don’t I won’t judge! After all, it is Fall, curling up in front of a fire with your slippers on, and sipping on a cup of hot cocoa while you secretly listen to Christmas music 80 days before the holiday starts is just fine by me.

Rotisserie Chicken Noodle Soup
Ingredients
- 1 rotisserie chicken
- 10 cups Chicken stock
- 1 Tbs olive oil
- 1 onion diced
- 2 cups carrots diced up
- 2 cups celery diced up
- 1 tsp parsley
- 1 tsp oregano
- 1 tsp onion powder
- a pinch of cayenne
- 8-10 ounces wide egg noodles
- Salt to taste
Instructions
- Remove the meat from your rotisserie chicken, set aside
- In a large soup pot add olive oil to the bottom, heat it, and saute your onions, carrots, and celery for a few minutes, until onions are translucent. Usually takes about 5 minutes.
- Stir in your parsley, oregano, onion powder, and cayenne.
- Then add in your chicken stock
- Bring the pot to a boil over medium heat.
- Add in your egg noodles and cook for about 5 minutes.
- Shred the rotisserie chicken meat you removed from the bones, and add it to your soup pot.
- Salt to your taste preference
- Enjoy!

Costco’s rotisserie chicken is a great deal! But we belong to a chicken CSA so I am using those right now. We do the same thing. Roast the chicken, use part of it, put the rest of the chicken in for stock and make soup! My son loves chicken noodle soup! Perfect for a chilly fall evening!
