Ground turkey, a sweet and savory sauce, and fresh vegetable slaw make this a fresh, healthy, tasty meal that comes together in just 20 minutes.
I am pretty sure I am not alone in the dinner dilemma. You know, the, I never pulled something out to defrost, and I have an hour until the kids need to be in bed, and I have nothing planned for dinner? That dilemma! I have been facing it a lot lately, more than I care to admit. So I decided to start a 20-minute meal series. Every week I will share one meal that can be thrown together in just 20 minutes, and is healthy and delicious. This Turkey Lettuce Wrap recipe is the first of the series, and trust me when I say you NEED to try it. And don’t mind my wrinkly old hands!
Don’t you just love lettuce wraps?
The health, the crunch, the freshness. They are fast and tasty. And customizable. You can add avocado, you can leave off the radish.You can drizzle a little soy sauce over the top, or some sweet chili sauce, or crushed up peanuts. Basically, it is really good as is and one of my favorite meals! But, if you want to change it to your personal preference, it will still be awesome!
Turkey Lettuce Wraps
Ingredients
- 1 lb ground turkey
- 1/2 cup shredded carrots
- 1/3 cup chopped water chestnuts
- 1 Tbs minced garlic
- Butter Lettuce
Sauce
- 1 1/2 Tbs Soy Sauce
- 1 TBS Oyster Sauce
- 1 Tbs dark brown sugar
- 1 Tsp sesame oil
- 1/2 Tbs white sugar
- 1 TBS corn starch
- 1 Tbs rice wine
- 1 Tbs olive oil
Slaw Topping
- 1/3 cup cucumber matchsticks
- 1/3 cup radish matchsticks
- 1/3 cup carrot matchsticks
- 2 Tbs chopped cilantro
- 1/2 Tbs lime juice
Instructions
- In a large skillet, heat olive oil and lightly brown the minced garlic
- Brown ground turkey with carrot shreds and water chestnuts
- Mix together the ingredients of the sauce, and pour over the meat. Then let simmer for a few minutes.
- Mix together the topping slaw
- In butter lettuce leaves layer the ground turkey mixture and top with a big spoonful of slaw
- Enjoy!
