The weather is absolutely gorgeous here in Montreal, Green Healthy Cooking’s headquarters, and we spend most afternoons at the park running around, riding bicycles, climbing the play structures at the playground and enjoying the sun.
The thing is, the kids NEVER want to leave, no matter how long we are there. We just have to get home at a certain point to eat dinner, put on pajamas, brush teeth and go to bed so mama can have a rest. Bribing them with ice cream or slush has been by far the easiest way to get them home, but of course I can’t offer them store bought ice cream every day. Their teeth would probably turn black by the end of summer, their bellies would grow to budda size (and mine, too), the sugar rush would keep them up half the night ( no.thank.you!), and my bank account would be empty way before the end of the month.
I often have some delicious Greek Yogurt Berry Popsicles or Peanut Butter Banana Popsicles in the freezer but if I forget to make more once the ones in the freezer are all gone I’m in serious trouble and need a quick and easy solution to whining kids who complain they never wanted to leave the park and only complied because of my promise for ice cream. Oh uh!
This is how Watermelon Slush was born in this house.
Only 3 ingredients and a blender, that’s all there is to this and it takes about 5 minutes to prepare, how awesome is that for a healthy snack drink that will make kids stop whining and be cooperative for bedtime? For me this is an award-winning Watermelon Slush because of all the positive results I get from it.
If you need an easy, healthy and especially quick dinner for before, after or even with the Watermelon Slush, this Salmon Burger with Garlic Herb Mayonnaise is prepared in only 20 minutes or this Cilantro Pesto in a mere 5 minutes plus however long it takes you to boil a pack of pasta. Spend as much time as you can outside in the park and come home to prepare food and Watermelon Slush in under 30 minutes to then enjoy the evening close to a window, out on the balcony or terrace, feeling the wonderful summer breeze.
Watermelon Slush
Ingredients
- 1 small watermelon
- 1 lime
- 2 cups ice
Instructions
- Cut watermelon in half and spoon out its flesh adding to the blender. (I removed the black seeds, not the white ones but it's not absolutely necessary, they are a bit bitter but full of zinc, so worth drinking if you don't mind the taste)
- Juice your lime and add only lime juice to blender.
- Add ice to blender and blend until all ice has been crushed to small bits.
- Enjoy!
