Tip 1: Use 7 Up.
The question I get asked the most is: Can I Use Other Soda In A 7 Up Cake?
When in a pinch you can use any carbonated lemon-lime soda. However, I have tested this cake with a bunch of different brands of lemon lime soda, and I have to say, it really does turn out the very best, with the best rise and the best crumb when you use 7UP.
It seems to be a little more carbonated than some other lemon-lime sodas and that will help with the rising factor.
Tip 2: Do Not Over Beat.
I love to let me kids help me make cakes, and once I wasn’t paying attention and an overzealous 7 year old went a little stir crazy (hahaha every pun intended). A little extra beating shouldn’t matter, right? WRONG!
If you over beat, the cake’s consistency will not be optimal. We don’t want a heavy cake, which over beating will produce. We want a light airy one.
Tip 3: Use Unsalted Butter.
It doesn’t make that much of a difference, but if you want the perfect portion of salt, then don’t add additional salt into the recipe, inadvertently with the use of salted butter.
Tip 4: Use A Bundt Cake Pan.
Some may be thinking, Does It Have To Be A Bundt Cake?
Yes, yes, yes!! If you want the best result, it should be a bundt cake.
Why does it matter?
Use a regular pan and you could be in trouble.
It may burn the edges of the cake or worse it make not cook in the middle. Basically a regular pan equals possible disaster. As the baking times will be different.
A bundt cake pan gives you that desired crusty edge.
Since with a bundt cake pan there is nothing in the center of the pan, more batter is pushed to the sides, giving you that crusty outer edge that we all love.
If you don’t have a bundt pan use 2 loaf pans.
Tip 5: Pick The Topping Based On Personal Preference.
I personally like the subtlety of a light dusting of powdered sugar on top of seven up cake.
However, if you want a stronger lemony vibe, you can add a lemon glaze. I love the lemon glaze found on these shortbread lemon cookies and think it would be amazing on this cake.

7UP Cake
Ingredients
- 3 cups white sugar
- 1 cup butter softened
- 1/2 cup shortening
- 5 eggs
- 3 cups all-purpose flour sifted
- 2 teaspoons lemon extract
- 1 Tablespoons lemon juice fresh
- 1 Tablespoons lemon zest
- 1 cup lemon-lime carbonated beverage such as 7Up(R)
Instructions
- Preheat oven to 325 degrees F (165 degrees C).
- Generously grease and flour a bundt pan.
- In a large mixing bowl, combine sugar, butter, and shortening using an electric mixer. Beat together until creamy and smooth.
- Add eggs, 1 at a time, to the mixing bowl, mixing well after each addition.
- Stir flour, 1 cup at a time, into the mixing bowl, mixing well after each addition, until batter is smooth and without lumps. But do not over mix.
- Stir in lemon extract, lemon juice, and lemon zest.
- Pouring slowly, while mixing, gradually mix lemon-lime beverage into batter and stop once incorporated. Pour batter into the prepared bundt pan.
- Bake in preheated 325 F. degree oven for 75 minutes, or until a toothpick inserted in the center of the cake comes out clean
- Remove cake from pan immediately so it does not stick. And place on a cooling rack.
- Cool and serve with a sprinkle of powdered sugar!

My local grocery store carries a 7Up cake and a chocolate coke cake. I’ve tried the 7Up cake from there before and, though I enjoyed it, I promise, your recipe is 10x better! Love this cake. Does it have to be all purpose flour or can a gluten free flour be used?

You can use a 1-to-1 replacement gluten free flour, I have only tried the Bob’s Red Mill version for this cake.
