The hardest part of Thanksgiving usually isn’t any single recipe. It’s getting a turkey, gravy, stuffing, three casseroles, mashed potatoes, cranberry sauce, rolls and two pies hot and on the table at the same time, with one oven.
This Thanksgiving shopping list and dinner timeline take care of that for you. It’s built for 8 guests and dinner at 4:00 PM. Most of the work happens before Thursday: by Wednesday night your rolls, cranberry sauce, mashed potatoes, sweet potato casserole and both pies are done, and your turkey has had its two-day dry brine. Thursday is mostly about the oven, and the timeline below tells you what goes in and when.
You’ve got this.

Friday, November 20

- Move a frozen turkey to the fridge. A 16 lb turkey needs 3 to 4 days to thaw in the refrigerator. My How to Thaw a Turkey guide has the full countdown by weight.
Sunday, November 22
- Bake the Parker House Rolls, let them cool completely, wrap them in a double layer of plastic wrap and then foil, and freeze them.
- Make a double batch of Cranberry Orange Sauce. Refrigerate it for at least 2 hours, then move it to freezer bags and freeze.
Monday, November 23
- Do your second shopping trip.

Wednesday, November 25
- Turn the turkey over and refrigerate it one more night.
- Move the cranberry sauce from the freezer to the fridge to thaw.

Tips for a stress-free Thanksgiving
- Oven too full? Corn Casserole also cooks in a slow cooker: high for 2 1/2 hours or low for 4 hours. Just check the edges so they don't overcook.
- Mashed potatoes ahead. Slow Cooker Mashed Potatoes keep up to two days ahead. Leave out the final butter, then reheat and stir it in.
- Rolls ahead. Baked Parker House Rolls freeze for up to one month. Warm them in a 350°F oven until heated through.
- Pie filling ahead. You can mix the pumpkin pie filling a day ahead and refrigerate it.
- Stuffing ahead. Sausage Stuffing can be assembled up to 8 hours before baking.
Thanksgiving timeline FAQ
How long does it take to thaw a turkey? In the refrigerator, plan on about 24 hours for every 4 to 5 pounds. A 16 lb turkey needs 3 to 4 days. My How to Thaw a Turkey guide has a countdown by weight, plus what to do if it's still frozen.
I forgot to thaw the turkey. Now what? You can still roast it. How to Cook a Frozen Turkey walks you through it at 325°F, with at least 50% more time.
When should I dry brine the turkey? Two days before Thanksgiving. It brines in the fridge overnight, gets turned over, then brines one more night. The full method is in Dry Brine Turkey.
Can I make the sides ahead? Yes. In this plan the mashed potatoes, sweet potato casserole, cranberry sauce and rolls are all made before Thursday, and the stuffing is assembled that morning.
