Baked Feta Chicken with Lentils & Bruschetta

A 5-ingredient Trader Joe’s dinner that’s big on flavor and short on effort!

If you’ve been around the easy dinner block for a while, you probably remember the viral baked feta pasta—creamy, tangy, and so simple. This Baked Feta Chicken with Lentils & Bruschetta takes that same magic and gives it a wholesome, protein-packed twist.

Using just three Trader Joe’s staples—cooked lentils, bruschetta sauce, and feta cheese—you’ll bake everything with juicy chicken breasts seasoned with Italian seasoning for a meal that’s satisfying, flavorful, and ready with barely any prep. It’s the kind of dish that feels gourmet but comes together in minutes. Serve with a Tossed Green Salad for a complete meal.

❤️ Why You’ll Love It

  • Trader Joe’s hack dinner: Only 4 store-bought ingredients + chicken.
  • Bursting with Mediterranean flavor: Tangy feta, herby bruschetta, and earthy lentils make every bite crave-worthy.
  • Protein-packed & hearty. The lentils and chicken make this meal filling without needing pasta or rice. And you are getting mega protein!
  • Minimal cleanup. Everything bakes in one dish!

What you need for baked feta chicken and lentils.

Ingredients for Baked Feta Chicken

  • 4 boneless, skinless chicken breasts
  • 1 package Trader Joe’s Steamed Lentils (about 17.6 oz)
  • 1 container Trader Joe’s Bruschetta Sauce (about 14.5 oz)
  • 1 cup feta cheese, crumbled
  • 1 ounce Italian salad dressing mix
  • Optional: Fresh basil or parsley for garnish

🍅 Instructions

  1. Preheat oven to 400°F (200°C).
  2. Layer the base: Spread the lentils evenly in the bottom of a baking dish.
  3. Add the chicken: Place chicken breasts on top of the lentils. Season lightly with salt and pepper (optional).
  4. Top it off: Spoon the bruschetta sauce over the chicken, then sprinkle the feta evenly across the dish.
  5. Bake for 30–35 minutes, or until the chicken is cooked through (165°F internal temperature) and the feta is soft and golden around the edges.
  6. Serve hot, garnished with fresh basil or parsley for a pop of color.

🍴 Serving Ideas

This dish stands beautifully on its own, but you can also serve it with:

  • A side of roasted veggies or a crisp salad
  • Warm pita bread or naan to scoop up all the saucy goodness
  • A drizzle of balsamic glaze for a little extra flair

💡 Tips & Variations

  • Use Trader Joe’s Chicken Thighs if you prefer a richer, more tender option.
  • Add a handful of spinach or arugula before baking for an easy veggie boost.
  • For extra creaminess, stir the feta and bruschetta into the lentils after baking to make it more saucy.

🥄 Storing & Reheating

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently in the microwave or oven until warmed through.

This Baked Feta Chicken with Lentils & Bruschetta is what happens when Trader Joe’s convenience meets homemade comfort. It’s simple, flavorful, and foolproof—a weeknight win that tastes like you spent way more time on it than you did.
